Chicken Claridge Stew

Reviewed: Dec. 1, 2003
Wow! Easy and delicious. I made this for twelve people from age 12-70 and even the picky eaters loved it (even the one that picked out all the tomatoes!) I added sliced mushrooms and wasn't exact on any measurements but the outcome was wonderful. Definitely destined to become a family favorite.

Almond Coconut Chocolate Cake

Reviewed: Aug. 22, 2003
This cake was moist and good, even a week later. It isn't the prettiest cake in the world (at least, not the way we made it!) but it sure was good.

Cranberry Swirl Coffee Cake

Reviewed: Aug. 12, 2003
I loved the flavor of the cake, but it was a little overwhelmed because I used two full cans of cranberry as suggested by other reviewers. I personally felt like that was too much. I had to cook it quite a bit longer than the time given, but that may be because of all the extra cranberry. I liked this because the cranberry added some tartness to balance the sweet.

Breakfast Kolaches

Reviewed: Aug. 12, 2003
I am delighted to find this recipe. I bought the hash browns but couldn't get them to stay on the dough, so I just put them back in the freezer. Besides, I never had them in the kolaches back home in Texas. Next time I'll cut the cheese in 'sticks' and wrap the dough around the cheese and sausage. I used the little smokies as some other reviewers suggested and they were great.

Chocolate Eclair Cake

Reviewed: Aug. 12, 2003
Took this to a retirement party and was asked by several people how to make it. Kind of funny to see it being eaten before many of the more elegant and impressive deserts. There can't be an easier desert to make. I'd like to try it with some coffee flavoring, or possible a liquer to make it a little more interesting.

Slow Cooker Chicken Dressing

Reviewed: Jul. 31, 2003
This recipe had a good flavor but it was quite mushy. I'll try it again and cut back on the liquid. Also might add some celery. It was good though.

Drip Beef Sandwiches

This is definitely an easy recipe and a good base for some interesting variety. A great start for anything that calls for shredded beef.

Enchiladas Suizas

Reviewed: Jul. 30, 2003
Excellent and much easier than I thought it would be. Like others, I did not fry the corn tortillas, just dipped them in the sauce and I substituted evaporated milk for the heavy cream. They still came out great with those calorie saving changes. I may have used more cheese and chicken than called for- the recipe easily fed six of us with some left over. I made corn and black bean salad from this site to serve with the enchiladas- a wonderful combination.

Honey Wheat Sandwich Rolls

Reviewed: Jul. 25, 2003
I just made these rolls. I didn't have bread machine yeast but they worked fine with regular yeast. Easy to make...after I rolled out the dough I cut it in squares and then just rolled the sides to make them circular. Turned out great- light and fluffy.

Alice Chicken

Reviewed: Jul. 25, 2003
Delicious! Easy enough that my daughter made it when I was late getting home. The only problem we had was that the chicken breasts were really thick and didn't cook through in the allotted time. We used precooked bacon and it worked great. Wonderful recipe!

Easy Slow Cooker Meatballs

Reviewed: Jul. 25, 2003
A good basic meatball recipe. Easy to make but be sure to use extra lean ground beef. Next time I will probably add onions and celery, chopped fine, to enhance the flavor, but they are still good meatballs without the extras.

Beef Tips and Noodles

Reviewed: Jul. 25, 2003
A great basic, easy recipe. I used fresh mushrooms and just sliced them in with the other ingredients before putting in the oven. I used three times the meat called for and about a pound of mushrooms. Next time I think I'll add some red wine to the gravy to give it a little more depth of flavor.

Spinach and Orzo Salad

Reviewed: Jul. 25, 2003
Loved this salad! Next time will put in even more spinach. It is an unusual side dish and lends itself to making some interesting additions (olives, artichoke hearts, etc.) I'll be making this often.

Black Bean and Corn Salad II

Reviewed: Jul. 25, 2003
Fantastic salad! I never got to serve it because my family kept 'tasting' it before mealtime. I made it a day ahead...my mistake! Next time I will have to either hide it or make it at the last minute. A great recipe.

Apricot Chicken I

Reviewed: Jul. 25, 2003
The ratings in my family went from **(my eleven year old) to *****(my twenty year old). I personally would have given it three stars. I don't think I'll make it again. It's not a bad recipe, just a matter of taste. It was certainly easy...definitely five stars for ease of preparation!

Italian Sausage Soup

Reviewed: Nov. 28, 2002
According to my 21 year old son, "the best soup I've ever eaten." My husband couldn't stop eating it. Different and very tasty.
