Old Fashioned Coconut Cream Pie

YUM! This recipe was delicious. I made one following the recipe exactly and one using the 1/3 cup of corn starch, 1-1/2 cups coconut milk and 1-1/2 cups whipping cream (omitting the flour and half and half). Both turned out yummy. I think the second one was a little more flavorful and rich though. Excellent!

Mrs Espy's Enchilada Sauce

I made this recipe on a clean out the fridge night. I had about a cup of chicken broth left so I cut a cup of water and added chicken broth. I also cut way back on the chili powder to keep it mild for my kids and husband. It lacked a little something so I added a half a tablespoon of sugar and that seemed to balance it out just right. I simmered it for at least twice the amount of time called for because it was a little thin. It reduced down nicely. Used this over the top of Chili Rellenos Casserole.

Chili Rellenos Casserole

This was good but I had a hard time getting the eggs to set. I don't know if it was my fault or the recipe, I will have to try again. I also used enchilada sauce instead of tomato sauce because I had left over enchilada sauce I need to use up. My husband loved this and for a meat and potatoes kind of guy, that is saying a lot.

Spanish Rice II

This was pretty good. I was out of bell pepper and veg. oil so I used butter and just left out the bell pepper all together. I also just did the seasonings to taste because my husband cannot eat real spicy foods.

Waikiki Meatballs

Yummy! Even my boys liked this one. I only gave it four stars just because it was a little sweet for my taste. Next time I won't use so much brown sugar. Good recipe though definately a keeper.

I wasn't sure what to expect from this recipe because I have never tried Challah bread before. It was easy to make. The braids made a beautiful presentation. The taste was bland at the very first bite but then as I chewed it the flavor developed and I before I knew it I had eaten half a braid. It made excellent french toast the next morning. Good recipe, but not the grand slam I was looking for.

Easy Bake Oven Cake Mix

I made this recipe and put it in a nice canister for my neice as a birthday present to acompany the Easy Bake Oven we bought her. She baked a little birthday cake for my son with it shortly after and it was much better than the prepackaged mixes they sell for the oven. It was moist and had really good flavor. I substituted some bakers cocoa for the drink mix as kids usually prefer chocolate to lemon. It was good and so much more economical. Thank you for sharing.

Mall Pretzels

This was a good recipe all in all but I prefer the buttery soft pretzel recipe personally. They had good texture, and were easy to make but lacked something in the flavor department. I will try again maybe tweeking it a little to my liking. Thank you for sharing.

Buttery Soft Pretzels

These were vrey easy to make and very tastey. They were gone as fast as I could pull them from the oven. But they lacked the buttery taste that I love in Auntie Anns Pretzels. I brushed them with melted butter after removing them from the oven and that is good as long as you eat them immediately or they get soggy and the salt disloves. I also tried to brush them with butter before baking but that just brushes the salt off. My sister in law is not a fan of Pretzel chains but she loved these so something must be right with them. ;) Thank you. It will definately stay in my box I will just have to tweek it to get that buttery taste.

Crispy and Creamy Doughnuts

MMM! These were good! I agree with others that they are not as light as KK but I think they are better. (I never really cared much for the KK.)I did have to add a little more flour but thats to be expected with different climats, temperatures and humidity. I had just enough glaze for the rounds, but I rolled the holes in sugar. As for how long and how well they keep, I did not have to worry about that. I have a large doughnut loving family of 6 ( not to mention the help of the 3 cousins)and the doughnuts were pretty much eaten as fast as I could glaze them. I would have liked to have submitted a picture but I did not have any doughnuts left to photograph. Good recipe. Thanks for sharing. :)

Ground Beef Mexican Style

This was an easy and quick mid week meal. I needed to use up some left over taco meat and this recipe was great for that. I will agree it was a little bland for us, we ended up using a lot of salt at the table. All in all it was good and even better the next day. I will use this recipe again with some extra salt and pepper.

Favorite Old Fashioned Gingerbread

Wonderful! My house smells so good. This bread is best the next day after being wrapped in plasic wrap over night, this really brings the moistness back. I added 1/3 cup of mayo to the batter with the egg to add a little more moistness since some said it was dry. Over all a great recipe. Thanks for sharing.

Baked Pumpkin Bread

Fantastic! I followed the recipe exactly the first time I made it and it was sooo good. The next time I jazzed it up a bit by topping it with a mix of: 1/4c dark brn sugar, 1 tsp. cinnamon, 1Tbl. flour, 1 Tbl. melted butter. That will top two loaves...trust me you will want to double the bread recipe. I also added Craisins and chopped pecans. It is the best the day after baking. I found this recipe better than the higher fat and cal. recipes thank you for sharing!

Chicken and Corn Chili

MMM! This was delicious and so easy. I served it with shredded cheese and sour cream and some homemade flour tortillas. My husband loved it and he hates chicken. I can't wait to make it when it gets cold, it is a good snowy day recipe. Oh and the wonderful smell...mmm. I didn't have any problem with lack of liquid, I think it depends on the kind of salsa you use. I did only cook it for 7 hours total. Next time I think I might garnish it with a bit of cilantro too.

Light Wheat Rolls

Oh My Gosh! These are delicious! I used honey instead of sugar and like others, just made balls on a cookie sheet. I am sure the shaped rolls are beautiful but I didn't want to go to all that trouble. This is my new fav. for wheat. Thanks Susan!

Cinnamon Rolls I

Best cinnamon roll recipe I've found so far. I doubled the recipe and added 1/4 cup melted crisco. I also made the filling x 4. I like it gooey. Frost with: Cream together 8 oz. cream cheese, stick butter, 1 tsp. vanilla, powdered sugar to desired sweetness and milk to desired consistancey. Frost hot. mmmm! Good job Sharon!
