About this Cook
I have always loved to cook. I was the youngest in my family and always too little to do the things my brother and sister were doing so I spent a great deal of time helping my mom in the kitchen. I learned the basics from her and my appetite (ha, ha) for cooking grew from there. I read a lot of cook books and cooking magazines and watch the Food Network. I surf the web for new ideas everyday. I love to be in the kitchen and my boys love to help too. I think it is very important for kids to learn their way around a kitchen. I even entered my boys in the scholastic cooking club. Every month they get a new cook book and a few kitchen tools of their own. They have their own drawer in the kitchen to store their supplies. I am a Medical Assistant but always wanted to pursue a career in culinary arts. Someday I'd like to open my own B&B. I secretly like to write nonsense and do it here

Roast beef and mashers, chocolate chip cookies, bread, cinnamon rolls, grilled burgers
My favorite family cooking traditions
My Dad and I make awesome sourdough, sweet rolls for Christmas breakfast. I also enjoy making Christmas breakfast with my in-laws. We cook everything outside on the bbq grill. There's nothing quite like the smell of hot breakfast in the cold morning air.

Chocolate silk pie, Oooey gooey cinnamon rolls with cream cheese frosting, Almond sugar cookies

Old Fashioned Coconut Cream Pie
YUM! This recipe was delicious. I made one following the recipe exactly and one using the 1/3 cup of corn starch, 1-1/2 cups coconut milk and 1-1/2 cups whipping cream (omitting the flour and half and half). Both turned out yummy. I think the second one was a little more flavorful and rich though. Excellent!

Mrs Espy's Enchilada Sauce
I made this recipe on a clean out the fridge night. I had about a cup of chicken broth left so I cut a cup of water and added chicken broth. I also cut way back on the chili powder to keep it mild for my kids and husband. It lacked a little something so I added a half a tablespoon of sugar and that seemed to balance it out just right. I simmered it for at least twice the amount of time called for because it was a little thin. It reduced down nicely. Used this over the top of Chili Rellenos Casserole.
