Greek Salad III

MMMMMM this recipe was really good. The leftovers got better and better. I can't have feta so I used blue cheese but that was the only change I HAD to make. Thanks for posting this recipe. I'm making it again tonight.

The Real Mojito

YUM YUM. The only thing I did different was to use honey because I can't have disaccharides. If you don't have rum, you can use vodka!!!

Fresh Tomato Salsa

For fast and fresh with ingredients I had on hand, this was good though it didn't have enough flavor for me so I added extra lime and a garlic clove. When I'm in a hurry I will make it again.

5-Minute Guacamole

Pretty good guac for such a quick recipe. Unlike other reviewers, I like a smooth guac. I did add a little lime juice but made no other changes and I couldn't stop eating it. I think the salsa is what made it so good.

Spaghetti Carbonara II

I didn't have any white wine, but this recipes was outstanding. I used zucchini sliced with my mandolin into angel hair pasta becuase I am on a special diet (Specific Carbohydrate Diet) and can't have gluten or starches. That was the only change I made and me and my friends couldn't believe how good it was. It was so simple and used ingredients I had on hand. A def keeper!!!!

Nikki's Steak Saltimbocca

My provolone cheese all melted out while in the oven. Otherwise, this was an OK dish. My picky husband and 6 year old daughter both ate it up. Thanks for the recipe I am definately going to try it again and hopefully keep the provolone in this time. ***Second review: I really didn't like the sage flavor and can't find prosciutto. These were my changes that made it a 5 star meal. Fried 4 pieces of bacon in a skillet, sprinkled fresh chopped rosemary and fresh cracked pepper on the steak, added provolone then bacon. I left the steak whole and rolled it up and secured with toothpicks. Seared in the skillet with the bacon drippings, put it in the oven until done. This was so much better to me. The rosemary really complemented the taste of the steak, cheese and bacon much better than sage. Oh, and my provolone didn't melt out this time!!!

Chunky Marinara Sauce

Because of a special diet I can't use canned tomatoes or paste so I just subbed the same amount of fresh diced tomatoes. There was enough juice from the tomatoes to make it just right. Also, I used 4 cloves of garlic because of personal taste. The addition of fresh basil and oregeno made this dish exceptional.

Spaghetti Torte

I'm on a special diet (SCD) so I made this with spaghetti squash, I pulsed farmer's cheese and yogurt until it was the consistency of ricotta, and I cooked the tomatoes with onions and garlic. I also added fresh parsley and oregano to the basil layer because I needed to use it before it went bad. Even though I was unable to follow the instructions perfectly, this dish was easily customizable to my diet and it tasted outstanding. I've tried to modify other recipes but they weren't nearly this good. It really satisfied my craving for a spaghetti dish. Thanks!!

Chris' Bay Area Burger

I really thought this would be a better burger. It didn't have a lot of flavor even though I automatically doubled the ingredients and added chopped onion along with the garlic. I am going to try it again, but thit time I will triple the ingredients and grill them.

Hurricane Cake

This is one of the best cakes I've ever had. I'm not that fond of German Chocolate cake mixes so I used a Devil Foods. The third time I made it, I sprinkled some semi-sweet chocolate chips in the pecan layer and that made it even better. The cake is so moist and delicious. The second day it's even better. Another thing, the first time I made it the pecan/coconut layer stuck to the bottom really bad so the next 3 times I cooked it (yeah it's a big hit), I lined the cake pan with parchment paper with the paper overlapping the sides so when the cake was cooled I could pop it out the pan and put it on a decorative plate. There was no sticking whatsoever.

Crab Crusted Grouper

This was so good. I used orange roughy since my local store didn't have grouper. Being from Louisiana, I automatically double all the ingredients and added some salt and pepper. Also, like another reviewer, I seasoned my fish with salt and pepper first. I only used freshly grated parmesan regganio and let me tell you, this was one of the best dishes I have ever made. It was restaurant quality. Thanks so much. I couldn't get enough of the leftovers. Second review: Since May of last year, I became sick so I had to do a little tweaking to get the recipe right for my diet. I used almond flour instead of bread crumbs. That's the only change I made and couldn't tell the difference. I am def sharing this recipe with other people on the Specific Carbohydrate Diet (SCD).
