Whole-Wheat Dark Chocolate Zucchini Brownies

These brownies are fabulous. My new favorite!! Don't panic when the batter turns very, very stiff after you add the flour. It will loosen up dramatically when you add the zucchini. Unfortunately, I did not have a 9x9 pan, so I used an 8X8. Next time I'll use my 8x8 but increase baking time by about 5 mins to make the brownies a little firmer. But this is a keeper -- serious dark chocolate moist brownie goodness.

Pumpkin Chipotle Pasta Sauce

Loved this recipe. Made it exactly as instructed. This is an excellent, creamy satisfying sauce that keeps the calorie count low. Delicious over both pasta and chicken

Strawberry Cake from Scratch

Delicious. Comes out moist and dense, which suits the preferences of my family. After looking through numerous reviews, I adopted these changes: Added 1/2 tsp salt; reduced sugar to 1 1/2 cups; used all purpose flour and cornstarch (2 TBSPs corn starch plus enough all purpose flour to make one cup) as I did not have cake flour; used 2 percent milk; used unsweetened fresh strawberries to make puree; used 2 9-inch cake pans; when frosting, put some raspberry preserves between the layers for a little tang! it was fabulous

Seasoning For Tacos

excellent, easy taco seasoning recipe. as other reviewers suggested, I cut down the salt to 2 tsp, and it was plenty. used 2tsp smoked paprika and 2 tsp regular, which turned out great. i also added half a diced onion to the meat as it was browning, and 2 TBSP tomato paste with the water and spices to the pot. yum. no need to buy packaged taco seasoning any longer.
