Molten Chocolate Cakes With Sugar-Coated Raspberries

Was skeptical at first. Followed some of the reviewers comments: melted Choco+butter in the microwave -so easy. Also chilled the batter until ready to bake. Buttered the hell out of my muffin tin (no paper) , poured in batter n baked for 10mins. Served with raspberry sauce from this site. Results was WOAH! My dad doesn't eat desserts, but even he said it was good. Yay! Update: it bakes more evenly when chilled for at least an hour, then whenbaked immediately after mixing up. I guess the time to rest helps the bubbles settle. Without resting, they came out not as pretty, but just as tasty! :D

Mango Salsa

Simple n delicious. Thinly sliced 2 shallots paper-thin to replace all the other onions, soaked them in ice water for 5mins, drained water n squeezed out excess so the smell isnt as pungent. Forgot to get red bell pepper so didnt use. Chopped cilantro n seedless birdseye red chili (for color) into the tiniest possible- then toss over 1/2" cubed mangoes n add to other ingredients, color contrast over the yellow mango looks like confetti n very pretty!

Souvlaki

Soo yummmyy!!! I used 2 whole tenderloins, i dont know how much they weighed, they were the standard ones from costco. I doubled the marinade so that all the meat were covered.But next time, I'll def marinade it overnite. The flavors were wonderful, but it barely penetrated the insides of the meat. I baked it in my oven 400 for 25mins like other viewers said, and it was awesome. Leftovers taste even better the next day reheated. Served with a greek salad, and a good garlicky tzatziki and some couscous. Will try this on my new outdoor grill or other meats some time. Thanks!

Basic Beef Stock

i've made my own beef-bone stock for yrs, but never thought to roast the bones until i stumbled across this recipe. i used whatever was on sale: beef marrow bones, and beef spare ribs, didn't have any parsnips so i omitted them. Added a whole bulb of garlic along with the roasting part. The stock came out AMAZINGLY AWESOME. The roasting gave the stock a whole new dimension of flavors and gave the stock a beautiful caramel color that my previous bone-stock recipes lacked. The roasted garlic scent was very obvious, i thought it added depth to the stock, but it might be too overpowering for non-garlic lovers. But overall, it's a beautiful stock that's worth the effort.

used frozen (thawed and drained) berry medley, didnt have enough pastry to make the top crust so it was open faced. evryone at home loved it. thank you so much for this great recipe.

Strawberry Spinach Salad I

sooo moneeeeeyyy!! perfect summer's night dinner! my bf loved it too. used balsamic vinegar instead, left out poppy seeds n almonds cos dint have any. added sliced button mushrooms n feta. used creamed honey instead of sugar (also cut the amount of sweet by half as adviced by other reviewers)served with a side of grilled chicken (yes, the salad was the main dish!!) thank you for this amazing recipe!! i cant wait to make this for my parents back home too!!

Apple Strudel Muffins

Four stars cos Tweaked the recipe a lil. muffins came out extremely moist. Never baked or had a thing for muffins b4 and was surprised how good it was. My boyfriend loved it. Baked on middle-lower rack. Changes:Replaced the 1 cup white sugar with 1/2 cup brown- just perfect. Apples: used 2 regular gala, 1 large granny smith. To flour mixture: 1 tsp cinnamon, 1 shake of ground nutmeg. Some reviewers suggested putting the topping in the muffin- I found it made it way sweet for my liking. And it made the muffin appear not well mix cos it was too sweet on some parts. On top of muffin was ok. Didnt add any water/dairy cos I think the addition of extra apples made it moister during the baking process. def worthy of trying!

Barbecue Ribs

I made this twice. The boys loved it. The bones just came off the meat. I rubbed the ribs with some Lawry's seasoned salt, paprika and chilli powder before baking in the oven. ran out of brown sugar so used maple syrup instead. Marinated overnight before throwing it on the grill..SOOOOOO GOOOOD.

Roasted Lemon Herb Chicken

i've made this recipe twice for my homeboys, and they liked it.some of the other reviews mentioned that the meat was pretty bland, so i brined it for 2hours before baking it. I found the brine recipe on this site, but i don't remember what it's call. Basically about 8cups water, 1cup kosher salt, a whole orange and lemon,cut and juiced,4 bay leaves, about 2tbsp sugar, handful of chopped garlic, a handful of dried thyme and a whole sliced onion. dump ur chicken in there at room temp for 2 hours and follow the recipe. the second time i bake the chicken, i used 1/2 tsp olive oil instead, cos 2tbsp is really too much. Chicken breasts -30min, thighs with skin on (yummilicious)-45mins, i also tucked the lemon wedges under the skin while bakin and removed them just before serving. Thanks for sharing!!

Hot German Potato Salad III

we're a buncha college kids and since im the mama of this household, im always searching for recipes that'll appeal to them. My 3 homeboys are picky eaters, but they totally loved this recipe. i lessened the recipe for "4 servings", added more bacon & bacon drippings, about 1/4 cup of water and another tablespoon of sugar cos I found the vinegar too potent for the boys taste. Like real kids, they don't eat they veggies, so I hid 4 stalks of chopped celery instead of celery seeds, and they happily devoured the whole thing. It's fabulously tasty, however, I would only make it from time to time cos I think it's not very healthy.. thanks for sharing!
