Curried Honey Mustard Chicken

Quinoa with Chickpeas and Tomatoes

This was GREAT! I used 2 cups of water and only simmered the quinoa for 15 minutes. Also, instead of the olive oil, I used a few squirts of a low-calorie balsamic vinegar dressing. I can't wait to have the leftovers!

Grilled Portobello Mushrooms

I only added 3 Tbs of balsamic vinegar and it was enough for me. I had to bake these in the oven but next time I will grill them or wait and make them another day. Thanks for the recipe.

Baked Chicken and Zucchini

This was really good! I did have some changes though - I used panko breadcrumbs, I did not cook or rub oil on the zucchini (just put it on the bottom of the pan), I also did not put any cheese on top of the chicken. This was easy and pretty healthy.

Slow Cooker Taco Soup

This was great and super easy! I used turkey meat and browned it with the taco seasoning. I used a 28 oz can of stewed tomatoes which i chopped and then i added 1 can of Rotel instead of the green chilis. I didn't use any water and the consistency was perfect. Also added additional seasonings like cumin and chili powder. Served with fritos and cheese.

Spiced Sweet Roasted Red Pepper Hummus

This was sooooo tasty! I used a 12 oz jar of fire roasted peppers and a little more garlic and this was delicious, not to mention low in calories. I will def be making this again!

Grilled Pork with Hot Mustard

This was incredibly good and so easy to make considering the limited amount of ingredients used. I accidentally added the sesame seeds to the mustard sauce instead of sprinkling them on the pork but it didn't matter. Also, only marinated for an hour and it was still very juicy and flavorful. Can't wait to have the leftovers tonight!

Curry Pineapple Fried Rice

This was a really great weeknight meal. I used 1/2 an onion, shrimp instead of chicken and all of the pineapple juice from the can. I also added 1/2 a bag of broccoli. Served with eggrolls. Delicious!

Richard and Suzanne's Louisiana Crawfish Pasta

This is my husband's favorite dish that I make. I only use 1 pint of heavy cream and I add extra Tony Cachere's seasoning. I also add sliced link sausage and shrimp. Can't wait until its crawfish season again!

Slow Cooker Chicken Taco Soup

Delicious! I used organic kidney beans instead of chili beans and reduced sodium chicken broth in place of the beer. Served with avocado, cheese, sour cream and corn chips. So good on a cold day!

Lemon Chicken Soup II

Delicious!! For the chicken, I used a rotisserie chicken and instead of rice, I used orzo. This was great, but it needs more seasoning like oregano, garlic powder and onion powder. I will be making this again!

Salsa Sausage Quiche

I am still amazed at how good this was. I added one can of rinsed black beans and used 1 lb of hot pork sausage. Also, added 1 more egg as suggested and added spices to the egg mixture such as cumin, cayenne and garlic powder. This was excellent and still great the next morning reheated!

Spinach Lentil Soup

This was perfect for a cold night! I added more rice, kielbasa, and lentils (2 cups) and added garlic to the onion mixutre and used all reduced sodium chicken broth with a spash of water. Delicious!

Amy's Barbecue Chicken Salad

This was a great summer salad! I only used one head of lettuce and this made four servings. I did use other reviewers suggestions of using 1/3 BBQ sauce and 2/3 ranch. I may cut back on the cilantro or not even add it next time. Thanks for the recipe!

Pan-Fried Asparagus

Very good and easy! I used a pound of asparagus and only one tbsp of olive oil. I also love garlic so I used 3 cloves. This is a great way to eat asparagus and you can cook it to the firmness that you desire!

Salsa Chicken

This was the best and juiciest chicken I have ever made! I was skeptical bc of the lack of ingredients but it was delicious. The only thing I did differently was that I lined a casserole dish with aluminum foil and then put one can of black beans (drained and rinsed) before putting the chicken on top. Thanks so much for the recipe!
