Mushroom Pork Chops

This was a fast, easy, weeknight meal! I added minced garlic but the flavor overall was a little bland. I would make this again if everything was already in the pantry but otherwise I probably wouldn't make it again.

Chicken Avocado Pizza

This was a pretty good pizza! Next time I think I might make it more of a mexican chicken pizza by adding corn and black beans. It was a nice change from a tomato sauce pizza though. Definitely worth a try!

Pumpkin Turkey Chili

This was a delicious surprise! My changes: no bell pepper, 2 cans of rotel (drained), 1 can each of kidney beans and black beans (rinsed and drained), 1 can of corn, 3 cans of low sodium chicken broth, and used 2 cups of pumpkin pie pumpkin puree rather than just pumpkin puree. Also added more seasoning like cumin, chili powder and cayenne pepper. The contrast of the cinnamon sweet flavor with the spice was wonderful! Can't wait to have the leftovers!

Beer Butt Chicken

So delicious and so moist! I baked at 380 (that is my oven's temp for 350) for about an 1 hour and 20 minutes and it was PERFECT! I lifted the skin off the chicken with the end of a butter knife and put soft butter and herbs between the skin and meat and then rubbed it all on the outside of the skin. It truly couldn't have been better!

Chicken Caesar Pasta

This was so good and so easy! I baked the chicken in lemon juice, salt, pepper and balsamic vinegar and it was great. I didn't use the red wine vinegar and it was still amazing! Great for a week night meal!

Downeast Maine Pumpkin Bread

Salmon with Brown Sugar and Bourbon Glaze

I love salmon but this sauce did not cut it for me. My BF and I both agreed that it was edible but nothing more than that. Sorry but I would recommend a lot of other salmon recipes on allrecipes.com besides this one. Thanks anyways!

Pumpkin Pancakes

These were pretty good! I love everything pumpkin but these pancakes had an earthy aftertaste for some reason. I would probably try making them again though....maybe add some chocolate chips!!

Black Bean Hummus

I was really excited to try this but it was too bland for me. I added 1/2 a small can of diced jalapenos and that gave it some flavor but overall I have had much better hummus.

Chicken Enchilada Soup I

This soup was excellent!! I added 1/2 tsp of chili powder and added a small can of diced chilis. I also used a large can of chicken...next time i would use an additional small can of chicken. I used 7 tortillas in the soup and with 3 of the tortillas, I cut them up, sprayed them with Pam and then put them in the oven under low broil. I can't wait to eat the leftovers!

Exchange Gang Pasta with Shrimp

I added an extra shallot and clove of garlic but for some reason there wasn't a lot of flavor. I was really looking forward to this but for some reason, even with all of the flavorful ingredients, it was bland. Sorry!!

BBQ Feta and Hot Banana Pepper Turkey Burgers

These were surprisingly so good! I added 2 cloves of minced garlic. I had my burger w/BBQ sauce and my BF had his with ketchup but we both agreed that the BBQ sauce really complimented the flavors in the burger! Thanks for the recipe!

Pumpkin Chocolate Chip Cookies III

These were great and made the house smell wonderful! I added 1 tsp of nutmeg, used applesauce instead of oil, pecans instead of walnuts and baked at 365 for 13 minutes. I found that the smaller the spoonfuls I made on the cookie sheet the more we liked them! Thanks for the recipe!

Baked Bar-be-Que Chicken

I seasoned the chicken and then poured the BBQ sauce over the chicken and baked without doing the first bake with no sauce. This is great! Just your basic BBQ chicken!
