Farmer's Market Vegetarian Quesadillas

My BF and I loved these! I sauteed yellow onions with some garlic then added sliced zucchini, yellow squash and mushrooms. I seasoned the veggies with salt, pepper and italian seasoning. I low broiled the tortillas in the oven, about 4 minutes per side, instead of heating them in the pan. I had the leftovers for lunch and they were even better. I liked mine with some salsa and my BF liked his with sour cream. I will def be making these again!

Fast English Muffin Pizzas

I made these last night for a really quick dinner with salad. I had some extra pesto from the night before so on a few of them I used that instead of the pizza sauce and it was delicious! Also, I used turkey pepperoni because it contains 70% less fat and tastes just as great. Nothing fancy but I would make this again.

I used to love these when I was younger and now my brother and sister love them too! I quadruple the recipe for just one drink. 1/4 cup of Sprite or lemon-lime soda is just not enough.

Lemon Garlic Tilapia

Next time I will not add the garlic as it makes the taste very pungent. I will probably just add garlic powder. Also, I added a few tbsps of dried dill and the result was great!

Grilled Portobello Mushrooms

I only added 3 Tbs of balsamic vinegar and it was enough for me. I had to bake these in the oven but next time I will grill them or wait and make them another day. Thanks for the recipe.

Red Potato Bites

These were really good! I added 3 cloves of minced garlic and basted the potatoes with olive oil, salt and pepper. I microwaved the potatoes and they still came out great!

Southwest Chicken

This recipe was a 4 as is but with added spices like cumin, cayenne pepper, garlic powder and chili powder, it ended up being a lot tastier! I cut up the chicken into bite size pieces as recommended and then sauteed them in the skillet with garlic and all of the spices above. I added a lot more seasoning once the beans, corn and tomatoes were added. Served over yellow rice. With these changes, I will def be making this again for a quick week night meal!

Baked Potato Skins

My mom said these were the BEST potato skins she has ever had. I microwaved the potatoes and they were still excellent. Next time I will not use the parmesan cheese in the spread because it just burned on the pan, but besides that I will make it as is!!!

Gary's Stuffed Mushrooms

These were really good!! I did make some changes for what I had: I used ground sausage instead of crab and only a few Tbs of butter. Also added minced garlic and onion to the sausage. Added 1/2 C of mozzarella and 1/2 C of parmesan in place of the cream cheese. These were a hit on Christmas!!

Grilled Asian Chicken

This was SALTY! I did not season the chicken with salt and I even used reduced sodium soy sauce and it was still too salty for my tastes. Next time I might add pineapple juice and/or more honey in place of some of the soy sauce. Thanks anyways!

Spinach Lentil Soup

This was perfect for a cold night! I added more rice, kielbasa, and lentils (2 cups) and added garlic to the onion mixutre and used all reduced sodium chicken broth with a spash of water. Delicious!

Jalapeno Hummus

BEST HUMMUS EVER! I have been trying and trying to make a hummus that is restaurant quality and this is it. I used a whole can of beans, with some of the liquid, doubled the lemon, and doubled the jalapenos! Excellent!

Pork Tenderloin with Dijon Marsala Sauce

This was pretty good. I had to work late so my BF made this and added mushrooms as suggested. Served with mashed potatoes and peas. Had this for leftovers the next day and it was just as good!

Salsa Sausage Quiche

I am still amazed at how good this was. I added one can of rinsed black beans and used 1 lb of hot pork sausage. Also, added 1 more egg as suggested and added spices to the egg mixture such as cumin, cayenne and garlic powder. This was excellent and still great the next morning reheated!
