Mexican Pizza II

I was very excited about this recipe but it just didn't live up to the Taco Bell standard! If I ever crave a Mexican Pizza I will just go to Taco Bell.

Jimmy's Mexican Pizza

These were ok but there was something missing. I added jalapenos but I still think it needed some more heat. Also, I wanted the tortillas to be crispy but they werent. I would def make these changes if I made this again!

Kung Pao Chicken

Angel Hair Pasta with Garlic Shrimp and Broccoli

Delicious! I used 1% milk and half and half in place of the heavy cream and it came out perfectly! I added more pesto, garlic powder and ground red pepper for spice. Served with garlic bread. I can't wait to eat the leftovers for lunch today!

Two Layer Greek Dip

I used greek yogurt like other suggested and it was great! I toasted pita bread and then cut it into small triangles! I would def make this for a party.

Shaved Brussels Sprouts with Bacon and Almonds

As another reviewer suggested, I cut the brussel sprouts into quarters and then sauteed with pine nuts, butter, and olive oil. I also added real bacon pieces at the end. This was my first time to make brussel sprouts and they were great!

Fiery Fish Tacos with Crunchy Corn Salsa

This was wonderful and so easy! I used 1 cup of corn, 6 green onions, 1 cup of chopped tomatoes and 1/2 small can of diced jalapenos with 1 lime squeezed over it. I sauteed this mixture over the stove while I broiled the fish in the oven. Served with black beans and mexican rice. Delicious!

Vegetarian Korma

This was pretty good the first day but so much better the next day for lunch. I used one can of lite coconut milk in place of the cream and instead of potato, I used 2 medium sized zucchini. I also skipped the bell pepper and added half a bag of frozen cauliflower. Next time I will add some cayenne pepper and try adding chicken.

Asparagus with Parmesan Crust

I made this last night for dinner and it was delicious. I sprayed the asparagus with olive oil spray and did not use the balsamic vinegar to cut on calories and it was delicious!

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

The phyllo I had got moldy in the refrigerator so I only got to try the sauce but it was amazing! I actually couldn't believe how good it was. I thought I had overcooked the lemon juice but right when it turns a dark, golden yellow, the cream is ready to be added. I added a little garlic powder as well.

I took another reviewers suggestion and did not use any oil and it didn't need it. I didn't have any time to marinate so I put it in a pan with aluminum foil in the oven and it came out perfect!

Baked Chicken and Stuffing

This was so good and comforting! I made only 1/2 the recipe with 2 chicken breasts cut in bite size pieces. I also added a head of broccoli, which I steamed for five minutes and then cut into small pieces. I used one can of cream of chicken soup with herbs and about only a 1/2 C of cheese. Tasty!
