Mexican-Style Goulash

This was good. I used ground turkey instead of beef and I added a whole extra large jar of picante sauce in addition to the can of Rotel. Thanks for the recipe!

Erin's Indonesian Chicken

This was pretty bland even with the red chile paste. It also has a much stronger peanut butter taste than I was looking for. Thanks for the recipe but I will not be trying this again.

Authentic Huevos Rancheros

This was reallllllyyyyy good! I only used Pam spray...I didn't use vegetable oil or butter b/c you don't need it. I also made black beans and mashed them and added a few tbs of salsa and cumin to it (b/c I didn't have refried beans). I layered them as tortilla, beans, monterey jack cheese (instead of cheddar), strips of bacon (instead of crumbled), the egg, green onion and a small spoonful of salsa. I didn't really mean to make these changes but its just what I had on hand! Soooo good!!!

Salmon with Lemon and Dill

Italian Spaghetti Sauce with Meatballs

I just made the meatballs and then used a jar of spaghetti sauce because its what I had on hand and the meatballs were perfect! The 1 lb. of meat made more than 12 meatballs buts thats ok. I am going to freeze the rest of the sauce and meatballs and eat it for another day. Served with a caesar salad and garlic bread! Thanks for the recipe!

Chicken Florentine Casserole

I thought this was just ok but my boyfriend loved it so I will give it 4 stars! I would recommend baking it in a larger pan or drain the juices because it was too watery for me. Will probably make again for my boyfriend.

Cha Cha's White Chicken Chili

I like a thicker chili so I took the advice of others and added a can of corn, drained, a can of black beans drained, 8 oz of chiles, no cayenne pepper and only 1 cup of chicken broth! It was so good when I served it with sour cream and cheese! My boyfriend liked it too! Update: I just tried to have this for leftovers and it wasn't good at all. Maybe its bc I didn't have any sour cream left.

Salsa Chicken Rice Casserole

This was soooooo good the first night and as leftovers! I followed the advice of others and 1) halved the recipe for just my BF and I 2) sauteed onions 3) used a whole can of drained Rotel 4) added a can of rinsed, drained black beans. I also mixed everything together and then put it in the oven. You should def try this!!

Thai Spiced Barbecue Shrimp

This was so good and so easy to make!!! I just made a few minor changes 1) I only had time to marinate the shrimp for about 15 minutes and they were perfect that way, 2) I broiled the shrimp on low broil for about 4-5 minutes on each side and 3) I saved the leftover sauce, heated it and then had it on the side as a dipping sauce. Served this with steamed green beans and couscous. Loved it!

Sweet, Sticky and Spicy Chicken

This was great. It was a perfect week night meal because it was so easy to prepare and it didn't take long at all to cook. This will stay in my recipe box. I doubled the sauce and served over rice. Delicious!

This was just ok! It lacked flavor. I had to add a lot of seasoning and it was still just ok. I would not recommend this to anyone. Sorry but I won't be making this again!

These were so good!!! I made the recipe exactly as is and I wouldn't change a thing. I have always over baked pork chops and didn't really like them that much but this is the way I will make them from now on! Thank you for the recipe!

Easy Baked Tilapia

This was really good and simple to make. I seasoned both sides of the fish and half way through baking I poured out the melted butter and juices. I served this with couscous and corn. I will def be making this again! Next time to make it healthier I might skip on the butter.
