Chicken and Artichoke Pizza with Fresh Tomatoes

Great pizza! I actually used canned chicken and didn't even use the garlic which I love and it was still wonderful. Will def be making this again!

T's Sweet Potato Fries

Just like everyone else said...these were mushy! I skipped the microwave step, baked longer and even broiled for the last few minutes but they were still way too soft. Good flavor though (added lots of seasoning and cayenne pepper)!

Sloppy Joes II

These were great! I used 1/2C of ketchup, 1/4C of bbq sauce and 3 teaspoons of mustard. So easy and just like I remembered my mom making them!

Honey Coconut Salmon

This is excellent! However, the amounts are off. For two servings, I used less that 1/4C of honey, 1 tbsp of light brown sugar, 2 tbsp of honey and about two handfuls of coconut. Then I sprinkled a little more coconut on top. Can't wait to make this again!

Black Bean Rice Burgers

These were really tasty however they were not burgers. I just ate the "burger" without the bun because it wasn't the right consistency for a burger. I had a hard time keeping them together and I even added a handful of breadcrumbs as suggested. I will be making these again because they tasted really well (with the addition of garlic powder and chili powder) but I will probably bake them next time.

Asian Chicken Salad

Delicious! I baked the chicken in an asian dressing. I also added one can of drained mandarin oranges and it was perfect! So easy yet so good!

Zesty Zucchini and Squash

This was really good and very easy! I sauteed 4 cloves of garlic in olive oil, then sauteed the onions and then added the cubed squash and zucchini. Then I added one can of Rotel and let it simmer on medium low for about 15 minutes. I will def be making this again!

Grilled Cilantro Salmon

Made with basil instead of cilantro and it was excellent!! I only needed 1/2C of honey for 2 salmon steaks. Served with steamed broccoli. Can't wait to make it again!

Swiss Chicken Casserole II

This was really good and easy to make! I made a few changes: skipped on the swiss cheese, cut the chicken into bite size pieces then mixed it with the cream of chicken (with herbs), milk, a can of VegAll (drained), made Stove Top stuffing (low sodium) and then added that to the top. Cooked for about 40 minutes at 400 (with aluminum foil). Thanks for the recipe.

Absolutely Fabulous Portobello Mushroom Tortellini

Just ok. I made my own alfredo sauce and added frozen peas at the very end and it was good but overall I would not make this again. Leftovers were NOT good at all.

Lazy Katie's Taco Salad

I have always loved this recipe because it is really good and really easy! I used ground turkey instead of beef, added a can of black beans (rinsed and drained), a can of corn (drained), added taco seasoning (low sodium)to the meat, omitted the taco sauce and added sour cream. Perfection! Can't wait to eat the leftovers today!

I thought this was a 4 and my BF thought it was a 5! It was good but I could have eaten it as is, without the sauce. I love the idea of just spraying it and adding salt and pepper. Thank you for the recipe!

Spinach Enchiladas

I am trying to start eating more "vegetarian" and so I was really excited to try this recipe! My recommendations: flour instead of corn tortillas, add extra garlic, 1 (4 oz) can of diced jalapenos, instead of ricota I used low fat cottage cheese, light sour cream instead of regular and LOTS of seasoning...cumin, chili powder, garlic salt, onion powder and pepper. Sooo good! Thanks for the recipe!

French's® Green Bean Casserole

This was delicious! I was craving green bean casserole and this hit the spot! My recommendations: buy the large can of onion strings and add 1 C to the mix and then the rest on the top (when there is only 5 mintues left to bake), use 2 cans of drained green beans and ONLY 1/3 C of milk (if I would have used more than that it would have been very, VERY soupy). Also, I used fat free mushroom soup and it was perfect! Can't wait to make this again!
