Creole Cornbread Stuffing

This stuffing is absolutely amazing! I have never liked stuffing before but I decided to make stuffing for Thanksgiving anyway because it seems wrong without it. So, I found this recipe and when I tried it, it was just WOW! I felt like there was a flavor explosion in my mouth; this stuff tastes awesome! I have now made this for the last two Thanksgivings and I definately plan on keeping this recipe around. It is just amazing and everyone loves it. I did omit the cayenne pepper and jalapeno peppers as I am not a fan of spicy foods. I also didn't add the red bell pepper as I don't much care for bell peppers; so there was a bit of variation in my stuffing. Thank you for sharing.

Harvest Pumpkin Brownies

While I will admit that this recipe isn't my taste I give this five stars. Just like the other reviewers I also agree that this is not a brownie and is, in fact, a cake. The flavoring was wonderful and it was a nice texture. I couldn't taste much pumpkin but I'm not sure how much pumpkin you should taste in pumpkin cake as I've never had it before. I didn't have pumpkin spice on hand so I used just under 1/2 tsp cloves and nutmeg, just under 1/4 tsp mace and allspice, 1/2 tsp ginger, and an extra tsp of cinnamon. Also, instead of the 2 cups of sugar I used 1 1/2 c. sugar and 1/2 packed brown sugar in hopes of giving the cake a more full flavor. I also experimented a bit by adding a rounded 1/2 c. bittersweet chocolate chips to half of the cake (so I could see how it tastes with and without) and I found it added a bit of a twist to it but it neither enhanced the flavor or detracted from it. Since I didn't have a 10x14 pan I used a 9x13 glass pan and baked it for thirty minutes, rotating it halfway through. I also did not use your frosting - I just dusted some powdered sugar and I thought it was alright that way. All around a nice recipe; despite it not being what I would go for I'll most likely make this again sometime. :)

Giant Crisp Chocolate Chip Cookies

These cookies are very addicting and hard to stop eating. The only problem is they don't flatten on the pan by themselves.

Cinnamon Bars

These bars have a lot of potential but are still missing that little extra kicker. Perhaps they would taste better with brown sugar or a half-and-half? I'll be playing around with this recipe and will let you know if I find anything that really makes these bars pop. Their flavor is good and they look very attractive. If you're looking for something super sweet and moist though, this is not the right recipe. They have that subtle sweetness to them that isn't overwhelming and are more of a "dunking treat" than a "snacking treat." Perfect for a cup of tea or coffee. I also agree that the recipe should call for a 9x13 pan, especially with how dry and hard to spread the batter is. If you want super thin though, the larger pan size could work - just watch your heat and time.

Mango-licious Tilapia

The mango salsa was fantastic! I'm not a fan of most salsas but this one definately took the cake. I followed the advice of some of the other reviews and added a tsp of honey, about a quarter cup of crushed pineapple and only added half an avocado instead of a full one. I didn't find the fish all that great however. I thought the taste was rather plain and needed some more kick but, being one that doesn't like tilapia, my opinion on the fish doesn't say much. The salsa did, however, taste wonderfully with the fish. I served it on top of a bed of rice with a side dish of salad. This was definately one of the best meals I've had in quite some time. I love the recipe a lot and I'll definately be making it again in the future.

Chocolate Chip Cookie Bars

This cooks well and tastes alright, but it's rather dry and crumbly. The bar doesn't hold it's shape that well and would do better with more moist ingredients.
