Waldorf Salad with Walnut Oil Vinaigrette

Great side dish--easy and yummy. I reduced the recipe to feed 3, 3 apples, 1 celery stalk, 1/4 c raisin and 1/4 c walnuts. I didn't have walnut oil, instead used 1 tbsp Canola oil and 1/2 tbsp Red Wine Vinegar.

Pasta with Sweet Peas

I added a little cornstarch with water, red pepper, butter, and 1 can Chicken Broth. I also added mozzarella cheese and topped with parmesan cheese. Light flavor, which is just what I wanted.

Asian Beef with Snow Peas

I lightly cooked snow peas and chopped red peppers in sesame oil, sprinkled withgarlic pepper, ginger and red pizza peppers. Added left over teriyaki tri-tip. Then added 1 cup water with a beef bouillon cube and sugar. Mixed soy sauce with 1 tablespoon cornstarch. My family thought we were eating at PF Changs!
