Roxie's Bran Muffins
I love the apple in it!!! I substituted chia seeds for the bran and used two tablespoons flax seeds. I also subbed 2 tablespoons Olive oil in for the butter. I thought they were yummy! The flax made the texture different but I still liked them. Nutty and sweet!

Delicious Ham and Potato Soup
This was very tasty. I modified it with a few time saving tips. My husband said I can make it as often as I'd like through the winter. I used bacon bits instead of ham. I added 2 cups of cheddar cheese as a final step. I also used pre-chopped frozen onion and celery to save time as well. I heated 3 potatoes in the microwave to cook them, then it was easy to take off the skin under cold running water, it just peels off. Anyhow lunch was ready in 10 minutes when I had the potatoes already cooked beforehand. Thanks for the very good base recipe!

Chicken In Basil Cream
This was really good. I added in a spinach green power blend and chopped it in the food processor in equal amounts to the basil to add in a nutrition punch for my friend battling cancer. She never eats her veggies but this is a great recipe for hiding in some spinach. Shhhh it's our little secret.
