Best Brownies

I thought these were quite delicious, and fast to put together as well. I would most certainly make these again. I didn't think to try the brownie without the icing first to get the real flavor of it, but together, the brownie and frosting are great!

Zucchini Patties

The only thing I did different was to grate the onion along with the zucchini so there were no onion chunks. Also used olive oil instead of vegetable oil and added a little nutmeg to the batter. These were pretty darn good.

Broccoli with Garlic Butter and Cashews

The other reviewers are right. This had way too much butter. Cut the butter down to a couple tablespoons, maybe, and this has potential.

Creamy Hot Cocoa

The recipe as is, like others have mentioned, is too sweet. A half cup of sugar is perfect. Otherwise, this is a really great hot cocoa recipe.

Creamy Au Gratin Potatoes

I thought these were delicious. I loved the addition o the onion which gave it all the extra flavor it needs. Sure, you could doctor it with different spices or mix-ins, but this is really quite good as it stands.

Aloha Coleslaw

As written, this recipe is just okay. Like other reviewers mentioned, it is definitely missing something. I added a splash of vinegar and that brightened it up a bit. I like the idea of the pineapple to sweeten the slaw, but it just feels like it needs...more.

Slow Cooker Sweet Potato Casserole

This did nothing for me. It tasted like regular sweet potatoes. I added more butter and sugar and that helped a lot. There are better sweet potato casserole recipes out there.

Chocolate Chip Pumpkin Bread

I made this into muffins and they were delicious! I only had a half cup of oil left so I threw in two mashed bananas and it worked perfectly. I will so be making these again.

Pork and Veggie Saute

The whole family loved this, which is a rare treat! I changed up the veggies to use what I had on hand (and I increased the amount) and made 50% more sauce because we like things saucy. Served over rice. It was delicious!

J.P.'s Big Daddy Biscuits

I had almost given up on biscuits as all the ones I've tried have turned out dry and dense. Not these! They were light and fluffy, just like I like them. I used butter instead of shortening because I just don't use shortening (in anything). I only gave it four stars because I feel like it is lacking a little in flavor - maybe it needs more butter or maybe make it with buttermilk? I don't know - it just needs a little extra something. I'll have to experiment to figure out what it is. Overall, best success I've had with a biscuit to date. Oh, and I also did let them sit in the fridge for about 3 hours before baking. That may or may not have made a difference, according to other reviewers.

Baked Dijon Chicken

This was a mixed bag for our family. One person loved it, one person hated it, and one person thought it was okay. I had a hard time with the breading on the bottom of the chicken just turning into goop and sticking to the bottom of the pan. Not sure how to combat that. I'd probably give this recipe one more try and if it still gets mixed reviews it won't be added to the dinner rotation again.

Strawberry Romaine Salad II

This was a really delicious salad. It had slightly more cherry flavor than I expected (or like) in the dressing, but I just added more mayo to balance it out. Actually, I used plain yogurt for the bulk of it and just a little mayo to round it out. Overall, though, I'd make this again. Yum!

Passion Bars

My initial reaction to these was...meh...but then I found myself going back to them again and again so I guess they were better than I thought! My husband thought they were great. If I were to make again, I'd use half chocolate chips, half butterscotch chips as that is just a personal preference but I wanted to make the recipe as stated first. Also, the topping/crust was a little crumbly. I think using cold butter would help combat this as the softened butter clumped into big chunks and didn't spread throughout all the dry ingredients. Cold butter cut into pea size pieces and then worked into the mixture would combat that problem, I think.

Slow Cooker Teriyaki Pork Tenderloin

I thought this was rather good. Like another reviewer mentioned, I cooked on low, rather than high, for about 4 hours and my tenderloin was plenty done. The "sauce" was really just straight liquid and while I did pour it over the meat after I sliced it, in the future I'd probably opt to thicken it with a roux and give it more of a sauce consistency. As it was, it was more like an au jus. But still, flavor was good.
