Teriyaki Pork Tenderloin

I ended up doubling the marinade, adding a little extra brown sugar, cutting the pepper down by 50%, and adding about a tbsp of honey. Instead of discarding the marinade, I boiled it down (and added a little water), to make a glaze. It was superb! My husband already asked me to make this again soon!

Quinoa Side Dish

Good Old Fashioned Pancakes

I didn't have baking powder, so I used the following ingredients instead and they came out AWESOME: 1 1/2 c flour 3/4 tsp. baking soda 1/4 c fat free greek yogurt 1/2 c lowfat sour cream 1 c skim milk 1 tbsp white sugar 1 egg 3 tbsp butter

Low-Fat Spinach and Veggie Lasagna

Spinach Triangles

Janet's Rich Banana Bread

I substituted 2% greek yogurt for the sour cream and I added 1/2 c. mini chocolate chips. I also used 3 bananas and mashed them, along w/ adding 1/4 tsp. cinnamon and nutmeg. It cooked for 60 mins and it was DELICIOUS!!! 2nd time.... also added 1/8 tsp. cloves and used sour cream instead of the yogurt

Mahi Mahi with Onions and Mushrooms

It was easy to make and I had all the ingredients in my kitchen, but the recipe was just ok. Next time I would only use 2 onions and an entire package of mushrooms. Also, I would add more garlic and lemon juice.

Grandma's Slow Cooker Vegetarian Chili

I loved it! (But, it tastes nothing like chili.) My husband who likes traditional chili didn't like this as much as I did, though. I used a McCormack chili spice packet instead of the chili powder, oregano, and basil. I also used low or no sodium cans of beans, when possible.

Easy Meatloaf

I caramelized the onions w/ a little brown sugar and garlic before adding them to the meat mixture. Also, I cut down on the milk by 30% and used a sirloin/turkey mixture of meat. As noted by the other reviews, I doubled the sauce for the topping and used italian bread crumbs. The meatloaf was very moist and very tasty! Both my husband and I loved it.

Chicken Breasts with Balsamic Vinegar and Garlic

This was really good! I didn't have fresh mushrooms, so I used 4 small cans of sliced mushrooms. I added a bit more balsamic and broth, but there still wasn't THAT much sauce. I thickened it up at the end with a little cornstarch slurry. Overall, very easy, tasty and good! I just wish there was more sauce...

Honeyed Pork Chops

Great! I marinated the chops for 30 mins before I put them in the pan. I wish the sauce thickened up a little bit more - but it was great, regardless. (I didn't have any onions around, so I added 2 tsp. of chopped garlic, instead.) I would definitely make this again.

Simple Spinach Lasagna

I was running low on noodles, so I only had enough to do two layers. So my lasagna was: sauce, noodles, sauce, cheese mixture, noodles, sauce, cheese mixture, sauce. It didn't matter though - it was wonderful! I cut down the water to 3/4c. and added slice baby bella mushrooms to the sauteed spinach. Fabulous. I will def make again!

Chicken Pasta Primavera

This recipe is MUCH better if you use regular (not low-fat) Cream of Mushroom soup instead of the reduced fat Cream of Chicken. The soup/sauce ends up being enough for at least 4 portions, so the amount of fat per serving is minimal anyway. I have made this recipe both with regular soup and low-fat - and I will certainly be sticking to the "regular" variety! It's certainly tasty for a quick and easy dinner. (I used whole wheat fusilli for the pasta.)
