Baby Back Ribs

Oh my! I used the baking method here with my own dry rub I put on them the night before. I wrapped the ribs in nonstick foil and baked per the recipe time and temp. They rested for a little while out of the oven and then went on the grill for a few minutes. These were perfectly done! Better than the ones we have smoked.

Scott's Buffalo Wing Sauce

I made this sauce exactly as listed at first. It tasted like spicy tomato soup. My husband agreed. The good thing is that it is very easy to modify - which we did - and ended up with a great sauce.

Slow Cooker Split Pea Sausage Soup

I'll never buy that canned stuff again. This made a huge batch so that I can freeze single servings. This was good the second day too. I would like to try it with ham the next time.

Banana Sour Cream Bread

I was not a big fan of banana bread but I had a couple of black bananas and some sour cream close to expiring. I cut the recipe by two thirds since I only had 2 bananas and used a mini loaf pan. I baked for 50 minutes at 300 and probably could have taken them out after 45. I ended up with 7 cute little mini banana bread loaves to wrap individually. My husband and I each tried one and they are great!

Sweet Potato Casserole II

I made this for Thanksgiving at my daughter's request. She loved it, of course. I thought it was a bit too sweet for a side dish - even though I could not stop eating it. It is like candy.

Ham Bone Soup

This was a very tasty way to use up a ham bone. I used carrots instead of green peppers and the spicy tomatoes with green chilies. I served it with crusty bread. It surprised me how flavorful it was without adding any spices.

Pineapple Upside-Down Cake VII

I had a box of white cake mix, a can of crushed pineapple and a sweet tooth. This recipe really hit the spot! I didn't use any water in the cake mix, just used the pineapple juice and added sour cream until I had the correct amount of liquid. My iron skillet wasn't big enough and I didn't have an 11x13 pan so I used an 8x11 pan. I baked it for 35 minutes at 350 and another 20 minutes at 325. I will definitely try using the iron skillet next time and just make some little pineapple-ly cupcakes.

Sopapilla Cheesecake Pie

I have made this twice now and it is so good. The second time, I found refrigerated "sheets" and they fit perfectly in the pan - no rolling seams. I have to bake this about 45 minutes. I think the next time I will cut back on the amount of butter and sugar on top. I had a problem with the butter pooling on top the crust.

French Beef Stew

I was so confused by all the changes made in the ratings for this recipe that I simply made it as listed and then put everything in the crock pot. This was easy to make and very flavorful. It will be my go-to recipe for stew.

White Chocolate Macadamia Nut Cookies III

I've made this recipe several times now and decided to rate it. I love these cookies! I don't use almond extract because I never seem to have it. With my oven the cook time is more like 8 minutes. I like mine a little flat and chewy so when they are almost finished baking, I lift the cookie sheet and drop it a couple times.

World's Best Potato Salad

I used to make a cooked dressing years ago and was looking for something similar. This was very close. I used 1/8 cup vegetable oil instead of 1/4 cup butter. I had sauce leftover and used it to make macaroni salad. Yum.

Chicken Florentine Casserole

I used chicken breast tenders and frozen spinach (thawed both first) for this recipe and skipped the first step. I baked for 30 minutes at 350 and served it over angel hair pasta. It turned out great! I had leftovers for lunch the next day and it was still yummy. Thanks for a keeper!

Shredded Beef Enchiladas

I cheated a bit on this recipe and used leftover shredded beef, then followed the recipe - until I got to the tortillas and used the flour tortillas since that is all I had. It had a great flavor but lacked the texture I know the corn tortillas would have given it. I can't wait to make it again and do it right! This is definitely a keeper.

Chuck's Favorite Mac and Cheese

I made this for a family dinner and asked my guests to rate it. They gave it a three but I think most of the blame is with me for using too much macaroni which made it a little bit dry and bland. So I gave it a four and will definitely try it again. It was very easy to make.
