Beef Pot Pie II

Just OK. I am never impressed with baking mix crusts. Maybe some day I'll learn to stop making them :-) The filling seemed to have too much gravy and not enough meat and veggies, which I wasn't impressed with but my husband liked. According to him, there is no such thing as too much gravy.

Fabulous Homemade Bread For the Food Processor

Yummy. Recipe was too big for my food processor. Ended up dumping the whole thing into the bread maker: first the yeast mixture, then the brown sugar/salt/oil, and last the flour and oatmeal. Mixed on dough setting, then rolled out and baked in oven. Easy and delicious. Made twice in three days because it disappeared so fast.

Classic Meatloaf

Cinnamon Pumpkin Waffles

I will NEVER make these again!!! The only positive thing I have to say is that the flavor is yummy. I ate mine without syrup because it wasn't needed. Now the downside. They are soft and gooey and fell apart in the waffle maker. Soft and gooey is good in the center of a cookie, NOT in an entire waffle. I started cooking them longer and longer (up to 10 min.) to try to get the waffles to actually cook. The ones that stayed in long enough to have a "waffle-like texture" tasted slightly burnt. With my family of 3, having one waffle ready every 10 min. is not realistic. Since each person gets every third waffle, it is ridiculous to require the third person (usually me, as the mom) to wait half an hour just to have my first waffle. In addition to the RIDICULOUS cooking time, there are so many ingredients that it took a LONG time to measure and mix all of the ingredients. I am a pregnant lady with a toddler. I just do not have time for this type of recipe.

Oatmeal Crackers

Added a tsp of vanilla, substituted in 1/4 cup applesauce for half the water, and substituted honey for white sugar. This makes a nice slightly sweet cracker but is not truly sweet like a cookie. I rolled all of the dough out in a 10x15 inch pan and cut lines every inch going both directions to make 1 inch squares. This seemed to be just about the right thickness and easy to break into tiny crackers. Baked 15 minutes until crispy, but in retrospect I think they might have been better a little softer. My 1 year old likes them a lot. We use them as rewards for potty-training.

Quick and Super Easy Chicken and Dumplings

Yummy. Added carrots, corn, and peas. The dumplings seemed HUGE when I first put them in, but seemed to shrink as the soup cooked. The soup also thickened, so I think some of the size of the dumplings dissolved and became "thickener".

Animal Crackers

Bland crackers (not a sweet cookie like store-bought animal crackers). My 16 month old loves them!!! I used part whole wheat flour and replaced half of the butter with applesauce.

Chocolate-Peanut Butter Cupcakes by KRAFT

My husband says these taste "good, but not great". I didn't taste them (had the chocolate-cherry cupcakes instead), but found them easy to make. I used Wilton decorating tip #67 to "inject" the pudding into the cupcakes. It was big enough to squeeze in a good amount of pudding quickly, but small enough to not make a big hole in the cupcake. I put the decorating tip in through the top of the cupcakes, and the glaze covered the hole made by the tip. The glaze thickens as it cools. I spread it on like frosting, and when it got a bit cool for spreading, just popped it back in the microwave for a few seconds. The chocolate chips and cool whip made a surprisingly smooth, shiny topping.

Yummy, easy, very salty (will use less soy sauce next time). Would recommend doubling sauce as many other reviews also suggested.
