Hearty Lentil Soup

This recipe is awesome! I use olive oil and whatever stock I have on hand -- no cheese is needed in my opinion.

Zucchini Brownies

I thought this was fairly good, but I did make some changes: no icing, only 1 cup sugar, and whole wheat flour. No one suspected anything and everyone enjoyed. I did use an overgrown zucchini from Mom's garden, which I recommend for moisture. Next time I would try to cut back on the oil and maybe add some applesauce.

Banana Oatmeal Cookies II

Yes, a bit cakey, but who cares! These were awesome! I just realized that I actually added a whole cup of bananas... Shortening weirds me out, so I used butter instead. I also put a cup of chocolate chips instead of the walnuts. I am mailing them, so I'm a little worried about how they'll hold up... fingers crossed!

Fruity Curry Chicken Salad

Very nice recipe. I brined the chicken breasts and then broiled them, which made the meat ncie and uicy. I used a Granny Smith apple and I'm glad a did because the tartness is a nice contrast. Regular raisins and walnuts worked fine for me. I think that in the future I will use yellow onions instead of green onions for a bit of a stronger flavor.

Coconut Curry Cabbage

Wasn't a fan right after I made it, but MUCH BETTER cold the next day. I would make it again and serve it as a cold side dish. I would cut the curry also to 1/2 tablespoon.

Lemon Chicken Tenders

Big hit with some guests. To make it healthier, I marinated the chicken strips in yogurt and then breaded (no need for egg) and I cut the sugar in the sauce to 1/8 of a cup. Two breasts fed 4 people easily with some leftovers.

Beet Salad with Goat Cheese

This was my first time making beets, so I was a little scared, but I have to say that the flavors really complimented each other well. I didn't do the dressing because I don't like salad dressings. I used feta because I had it around, but I'm a goat cheese fan and I think it would be even better with goat cheese.

Banana Muffins I

I need to update my review below. I used this recipe as a foundation for a carrot raisin muffin and it turned out great. Basically, I substituted 1 cup finely shredded carrot for the banana and added cinnamon and nutmeg and 1/2 soaked raisins. Turned out great! I made this with low-fat sour cream that I had hanging around and some over-ripe bananas in the freezer. At the suggestion of others, I added cinnamon and nutmeg. I can't ask for a more tasty banana muffin with such few calories. Thanks for the recipe! It's a keeper.

Simple Scones

I made these for my boyfriend's thesis defense this morning. I made the dough last night, cut the slices, and baked them this morning. Although I didn't try one, they went over really well. My boyfriend said they were amazing, but couldn't comment on their scone-like-ness.

Rosemary Turkey Meatloaf

I have been making this recipe for 3 years and just remembered that I should review it. It quite good. If you make it as is, it will come out juicy and will likely fall apart (but still taste good). I cut back on the milk and vinegar to address this. If you're interested in keeping the calories low, you can use skim milk, all white meat turkey, cut back on the breadcrumbs, and cut back the sugar (1/4 cup is enough) and it all still tastes great!

Moroccan Lentil Soup

Yum! What a great combination of spices and ingredients! I used dried beans and fresh tomatoes (I think I estimated fairly well, though I would add more tomatoes next time). According to how much I eat, it definitely makes more than 6 servings.

Pork Chops with Pear Sauce

The pear sauce was delicious and I would make it again. I would, however, probably come up with a marinade and broil the pork next time. It was just too dry this way.

Eileen's Spicy Gingerbread Men

I have yet to start my baking this year, but I've used the recipe for the past two holiday seasons and will always be a staple. The cookies come out well put together, but quite moist and stay moist for days! I always get rave reviews and it's probably the only thing my Jewish boyfriend gets excited about around Christmas time!

Chocolate Chip Pumpkin Cookies

These were pretty good, but I think I'll try another recipe in the future. At the suggestion of others, I added in nutmeg and allspice (maybe a teaspoon of each) and it came out good. I think others were surprised at the cakey texture, but they seemed to like them. My biggest complaint is that they started drying out by the second day even though they had been in sealed tupperware.

Pumpkin Cheesecake II

This was my first cheesecake, and thankfully it was a hit at Thanksgiving. The perfectionist in me was upset when it cracked, but I took inspiration from another reviewer and made a whipped cream and maple syrup glaze and topped it off with choppsed and whole pecans just as shown in the picture. It looked nice afterwards, but I will work on other techniques to prevent it from cracking in the future. Thanks for the recipe!
