Overnight Raisin Oatmeal Pancakes

Yum! These pancakes were very good and healthy too with only a half cup of flour and just a touch of sugar. I used whole wheat flour, organic sugar and regular oats (just what I had on hand). I also separated the eggs and beat the egg whites and folded them gently back in at the end before the 20 minute wait to make them extra fluffy. My two and four year old boys and hubby gobbled them up with applesauce and cinnamon on top, I liked them plain with a little maple syrup. Thanks for this recipe, we will definetly be making these again, as my boys love their pancakes!

Cream Cheese Pound Cake I

Sloppy Joes II

Very yummy sloppy joe recipe! I did, however, make some changes to accomadate what I had on hand and how we like it. I was making this for a pot luck so I used, 3 1/2 lbs. ground beef, 1 cup each green pepper and onion (about one small pepper and one med. onion). When browning the beef, I seasoned with salt/pepper/chili powder. In a bowl, I mixed 1 can (12 oz) tomato paste, 1 can (15 oz) tomato sauce, 1/4 cup brown sugar, 3 tsp. mustard, 3/4 tsp. garlic powder, and a few drops hot sauce. After browning and draining meat, I added this sauce and simmered in my crock pot, adding a little water to keep from getting too dry. Very good, and it was eaten up quickly!

Emma's Belgian Waffles

I also just got a waffle iron and this was my second recipe to try and will be the last - these were great! They also freeze very well.

Rich and Creamy Tomato Basil Soup

This is the best cream of tomato soup I've made! I thought I would miss onions in the soup, but it's great just like it is and it's so easy to make. Thanks Holly!
