To Die For Blueberry Muffins

Reviewed: Mar. 15, 2014
I was looking for an easy recipe to use up some less than great blueberries & I HIT THE JACKPOT! I had all the ingredients on hand and this was quick, easy & SO TASTY :) I'm a lemon & blueberry fan so I added 1/4 tsp lemon extract to a double recipe of batter. I was a little concerned bc the batter was so thick, but stayed true to the recipe and didn't overmix. I've made a lot of muffins in my day, BUT these are the BEST!! They rose perfectly with the streusel topping (a personal fave) these muffins will be my "go to" recipe in a pinch. Thanks for sharing :)

Baked Potato Soup

Reviewed: Jan. 24, 2011
Very good soup base, I made a few changes bc of what I had on hand-used dried reconstituted onion flakes, potato flakes instead of flour to thicken, evap milk instead of 1/2 & 1/2, 1/2 can cheddar cheese soup, 1/2 cup soup cream. Very forgiving soup add or decrease amounts as needed. This is a favorite at our church events :^)

Cheesecake Bars

good recipe, i didn't have enough cream cheese to double as others recommended, they're fine as is. i added 2 Tbsps sour cream to my mix & used chopped almonds instead of walnuts. i really like this isn't the typical graham crust base. YUMMY!!

Quick Yeast Rolls

Reviewed: Dec. 2, 2008
I tried this recipe b/c I need a quick bread 4 dinner. I was pleasantly surprised, really easy, tasty,& cheap to make. It made 12 good sized light rolls, that were good, even the next day. Only change I made was to use 1/4 cup of wheat flour. Like many others, I believe the key to these rolls are in the rising. I'll be making these again & again. Thanx for another great recipe fm this site.

Danish Pastry Apple Bars

Reviewed: Nov. 3, 2008
Would have given this ***** stars, but for the degree of difficulty rolling the crust (floured, chilled, & between wax paper) still had issues. I added the cereal to the bottom crust and upped white sugar by 1/4 c. (personal preference) Even w/ my problems my guests were WOWED! Will make in the future, but will use a large tart pan w/ removable bottom. Thanks for another good apple recipe.
