Monkey Bread Muffins

I didn't have pie spice in my cupboard so I used cinnamon and nutmeg. I used 7 muffin cups but could have spread it out to 8 or 9. These got rave reviews from my kids and my dad. Super easy to make. These do not last long. **Update: Made these again and they fill 9 muffin liners nicely.

Hamburger Hash

With a few adjustments to meet family needs this recipe is a keeper. What I added: liquid beef stock, diced carrots and celery, basil, parsley, garlic powder, salt & pepper and Worcestershire sauce. I also used flour to thicken it so it had a nice, rich gravy. The kids ate it up.

Roasted Garlic Cauliflower

I used the suggestions of others and reduced the heat and covered the dish. I found that it was steamed cauliflower opposed to roasted. The flavour wasn't bad but it was fairly mushy.

Skillet Green Beans

A handy little recipe to make up on short notice. I used fresh green beans opposed to canned or frozen. Next time I think I will add the bacon bits as suggested by another reviewer.

It was a good alternative to regular tacos. Next time I wouldn't cook it with the sour cream added, I would top it with it after baking. I did add a layer of medium salsa.

Pineapple Crisp

What an amazing dessert fresh out of the oven topped with some whipped cream. I made this to use up a fresh pineapple that was starting to look old. I had my doubts. I even made my husband try it first because I didn't think it would be any good...I was way off! In the past month I have made this 3 more times and have served it to company without complaints. Put your doubts aside and try this recipe!!

Volcano Pancake

Really good as a brunch dish without the cheese. Added vanilla to the batter. Served with syrup and whip cream. Update 2012: Added 2 1/2 tsp of white sugar to the batter plus the vanilla. The kids eat this up and everyone can eat at the same time. Love it!!

Kale Krisps

My kids actually ate this and I didn't even care for it. I sprinkled them with salt & pepper and garlic powder before baking. I still can't believe my kids ate this (one is almost 6 and the other is 4!!)

Sausage Potato Soup

Followed as close as I could without buying tons of prepackaged food. I left out the chicken, it doesn't really need it. I bought Mild Italian Pork sausage and took the casings off. I peeled and diced 3 white potatoes. Super easy and delious. The kids even ate it and didn't complain about the heat from the red pepper flakes.

Hot Spinach Dip

Close to the stuff you get at Montana's and Kelsey's. It lacked a little flavour at first. Added garlic and onion powder. I added some red pepper flakes and Tabasco for heat. I baked it in the oven at 350' stirring it and adding more cheese as needed. I kind of went crazy with the cheese. I used different amounts of Jalapeno Havarti, Marble, Mozzarella and Parmesan. The kids even liked this. I served it with tortilla chips. I think I might even freeze portions of it for later since it made a big batch.

I found them a little on the gritty side. Maybe the sugar should be melted with the chocolate? I enjoyed the ones with amaretto in them more then the rum.

Fresh Peach Sauce

Great sauce for crepes or waffles. I added a bit of cinnamon and a smash of peach flavored Vodka. *Made this again and used brown sugar, no cinnamon and more peach vodka. Let the vodka boil off so that only the flavour is left behind.

Cookie Dough for Ice Cream (Eggless)

Mini Chip Snowball Cookies

Mom's Italian Beef Barley Soup

This was so good. I added potatoes, carrots, celery, parsley, concentrated beef stock and omitted the tomato sauce. The kids loved it. I loved it. I WILL make this again. It did thicken up quite a bit so today with the leftovers I will just add more broth. Excellent starter recipe.
