Authentic French Meringues

I'm rating these a five because it is a great meringue recipe...if you like meringues. I only tried this recipe to use up egg whites that I had left over from making crepes in the morning. They turned out nice and shiny and everything you would want in a meringue, again...if you like meringues. *I broke up some of them with the flat side of a meat mallet and used them to top hot chocolate.

Ultimate Twice Baked Potatoes

I adjusted this recipe to use up leftover mashed potatoes I had in the fridge. I added sour cream, onion powder, crisp bacon pieces and grated cheese my taters. Placed the new mixture in a casserole dish and topped with more bacon (can't go wrong with bacon) and more grated cheese. Cooked at 350' for 10 minutes and then broiled until browned and bubbly. I would do this again but leave the skins on my potatoes for a baked potato casserole, a little easier than stuffing skins.

Award Winning Soft Chocolate Chip Cookies

These are just missing a little something. I used white chocolate pudding mix, added more vanilla and extra milk chocolate chips but omitted the nuts. I also chilled the dough before baking. After 9 minutes in the oven they were cooked. The kids enjoyed them and they do stay plump and soft.

Raspberry and Almond Shortbread Thumbprints

Followed the advice of other reviewers and added 1/4 cup extra flour. These didn't look cooked when I first took them out but then they hardened up a little once they cooled. Used strawberry jam and turned out great!

Banana Orange Bars

By itself the banana "bar" had good flavour but it didn't cook all the way through in the amount it said to cook them. The frosting had great flavour and great colour. That being said I'm not sure what place it had on a banana "bar". My dad enjoyed them, but he enjoys anything food related. :P

Shepherd's Pie VI

I have made shepherd pie a ton of times and had never tried it with cheese. What a great addition. Next time I will use more meat though to even out the ratio.

Chicken Pot Pie I

I'm rating this a five for when I used all fresh vegetables. I have made it following the recipe and it is not nearly as good. The canned vegetables turn to mush and it wasn't as flavourful. My suggestions: use all fresh vegetables, add poultry seasoning, thyme, parsley and concentrated chicken oxo. Add about 2 tbsp flour to soup mixture to help thicken. I'm confident enough with these changes to serve this to company.

Kevin's Teriyaki Chicken

The pineapple juice gave it a sweet after taste. Very moist, juicy chicken. It was good but I wouldn't make it for company. I used fresh garlic and ginger.

Mini Chip Snowball Cookies

They were a little dry but had a nice texture. I didn't have mini chips so I used large ones instead. I also substituted toffee bits for the nuts.

Artichoke Mashed Potatoes

A nice change from the regular mashed tats I make. Company enjoyed them but couldn't really tell it was artichoke it them, whether that is a good thing or not. Next time I will use even more garlic and more artichokes. Very creamy potatoes.

Stuffed Pork Chops I

This is a great recipe to use for company. It tastes like you fussed without having to. Cube the meat before browning to allow for easier serving. For the stuffing don't forget rosemary, thyme, salt, pepper and some chicken broth.

Sour Cream Apple Pie Deluxe

This is a nice twist on apple pie. I used a store bought crust but I found that the exposed crust browned way too fast. Even after covering it I found that it was too gross to eat. That being said the pie itself was great!

Roasted Garlic Cauliflower

I used the suggestions of others and reduced the heat and covered the dish. I found that it was steamed cauliflower opposed to roasted. The flavour wasn't bad but it was fairly mushy.

Mom's Italian Beef Barley Soup

This was so good. I added potatoes, carrots, celery, parsley, concentrated beef stock and omitted the tomato sauce. The kids loved it. I loved it. I WILL make this again. It did thicken up quite a bit so today with the leftovers I will just add more broth. Excellent starter recipe.

Maple Cookies

Following the advice of other reviewers I omitted the vanilla and opted for maple extract. Even after using 1 1/2 tsp of the extract I found it light on flavour. I might make up the glaze that was suggested today and see how I like that. This recipe does produce light, uniform cookies.

Beef and Irish Stout Stew

Fantastic. I made this for my family and then had 7 extra people show up for dinner. I was scraping the pot to get every last speck for everybody. One man even asked me for the recipe. I did add red potatoes, celery, concentrated beef stock, bay leaf, Worcestershire sauce and extra cayenne pepper.

The Best Banana Bread

This is a great recipe for over ripe bananas. I've been using this recipe for over a year and it always gets compliments. I add about 1 tsp of vanilla and 1/2 tsp of cinnamon to the batter but it isn't necessary.

Made these for my parents and they LOVED them. I used vanilla instead of lemon juice. I actually goofed on the recipe and used 1 cup of butter so to make up for it I added 1/2 cup extra rolled oats. They couldn't tell so why should I? ;) If you like date squares then use this recipe.

It was a good alternative to regular tacos. Next time I wouldn't cook it with the sour cream added, I would top it with it after baking. I did add a layer of medium salsa.
