Apple Enchilada Dessert

So easy and yet so delicious! Made it for the first time and served it to company...they loved it. The taste of apple pie without any fuss. Added more cinnamon then called for and next time (oh, there will be a next time) I might add some nutmeg. Served fresh from the oven over French vanilla ice cream.

Mediterranean Pasta

Made some major changes: red onion, green pepper, no bacon, basil, oregano, kalamata olives and red pepper flakes. Top with grated feta cheese and toasted pine nuts.

Cabbage Rolls II

Instead of making it into rolls I altered it to a casserole. I did increase the sauce, onions and added garlic. I still found it lacked a little flavour and needs more adjusting. I cooked it in the oven at 350 for an hour and it could have still used more time.

It was a really easy recipe to throw together as a BBQ side dish. I found it a little too vinegary, although it was better the next day. Next time I would add more sugar and mayo and less vinegar.

Healing Cabbage Soup

I didn't think this would be liked that much by my family but made it to help with my Grandma's liver cancer. Everyone enjoyed it! I threw in some carrots, celery and the tomato juice. I also added extra garlic and cayenne pepper.

Juiciest Hamburgers Ever

Used home-grown Highland beef for these and they were just missing a little something. It is a good base recipe though as long as you add your own flavor.

Chocolate Chip Mini-Muffins

My husband made these and loved the raw batter but we found that the cooked product was dry and lacked flavour. The kids ate them up but I think that had more to do with the abundance of chocolate chips in them.

Brownie Caramel Cheesecake

Incredibly sweet and in the words of my father-in-law, "sinful". My brownie layer was a little gooey but that didn't seem to bother anyone but me since I had to try and serve it. I did increase the cheesecake layer and used sweetened condensed milk instead of evaporated.

Three stars because as good as it taste it never set. That being said people were eating it with a spoon right out of the pie plate. I probably wouldn't waste my time and booze trying to make it again.

Farmhouse Chicken

Following the recipe will only get you 2 1/2 stars. For the full 5 stars make your own dressing and use cream of chicken soup. Toss in some sage when you are cooking your chicken and add a little chicken oxo to boost the flavour.

The five stars is for the topping and filling, I DID NOT make the brownie from this recipe. It could even had been a bit more mintier for my liking but I will be using this recipe again.

Blueberry Oat Cookies

The dough was very easy to work with but the blueberries didn't really cook down enough for my liking (or most of my family's liking). I think I might use the dough and make thumbprint cookies with it and fill it with strawberry jam.

Chocolate Crinkles II

I used mint extract instead of vanilla and added milk chocolate chips. I will be making these again and probably very soon. They reminded me of a fudge brownie mixed with a Girl Guides thin mint cookie.

Potato Leek Soup III

An excellent, healthy soup. I cut the butter in half and added parsley, cumin and Maggi seasoning. Pureed with hand blender but left some bigger pieces. Topped it all off with grated cheese and bacon.
