Roasted Pork Loin

This was my first pork loin and it turned out wonderful. It was moist, flavorful and juicy. It was tender enough to cut with a fork. I made up the rub, applied it to the loin and then sealed the roast in a food saver bag to get it coated better, left it for about an hour. I browned it in olive oil and garlic before throwing it into the oven. It didn't need the full two hours as others have stated. I did make my own gravy with the pan drippings and wine, I pressed it threw a sieve before serving.

Golden Potato Soup

Pretty good but I found that the cheese was the predominate flavour. Next time I might use less or none at all and let the potato and bacon (I didn't use ham) be the main attraction.

Pineapple Crisp

What an amazing dessert fresh out of the oven topped with some whipped cream. I made this to use up a fresh pineapple that was starting to look old. I had my doubts. I even made my husband try it first because I didn't think it would be any good...I was way off! In the past month I have made this 3 more times and have served it to company without complaints. Put your doubts aside and try this recipe!!

Shortbread Meltaways

Very delicate and a bit crumbly but very good and a definite make again. The ones with the toffee bits baked in went faster then the plain ones.

Oatmeal Raisin Toffee Cookies

This recipe is a hit every time. They always turn out soft and chewy, never hard and dry. There are no changes needed.

Mint Wafer Cookies

My husband loves these cookies. They have turned out each time with a crispy outer ridge and a chewy, soft center. It was a hit with the kids as well.

Chocolate Chocolate Chip Cookies II

These were incredibly soft and chewy. All the kids loved them and my husband gobbled them up. This recipe is a keeper! *UPDATE: These are my favorite cookies but I tweak them. I omit the vanilla and use mint extract instead. Instead of milk chocolate chips I use mint ones. These are AMAZING!

Apple Strudel Muffins

Very moist. The kids loved them. (this was my review two years ago) I made these this morning and couldn't understand why it has taken me two years to make them again. So yummy. I grated 2 apples and cut one, next time will even cut more into the batter. Next time I will also add cinnamon to my batter.

Added about 1 TBSP of flour to thicken it and added 1/9 TSP of Nutmeg for a little extra flavour. My kids loved it.
