Raspberry Vinegar Chicken Breasts

Reviewed: Jul. 17, 2008
Very easy, and turned out great despite using raspberry dressing rather than vinegar (which my grocery store doesn't carry). Served it with baby new potatoes, which sponged up the sauce and were lovely.

Emily's Famous Tiramisu

Reviewed: Jul. 14, 2008
I'm amazed that there aren't more comments about the excessive sweetness of this recipe. It's a shame, because in all other respects it is an amazing dessert - the texture, the appearance, and the underlying flavors are all wonderful. But ackkk! the sugar destoys the delicate mascarpone taste; you can't even tell it's there. Next time I will do as another reviewer suggested and halve the sugar all around. BTW, I served this to Italian friends yesterday who finished it politely but certainly didn't rave or ask for seconds. Nor did my friend whose absolute favorite dessert is tiramisu. But overall, the recipe is easy and beautiful.

Creamy Lemon Squares

Reviewed: Nov. 22, 2007
We like lemon desserts to be very tangy, so I doubled the lemon juice and reduced the sugar to 2/3 cup. Very good and very tart. I'm going to test them on my mother-in-law this week, as she also likes her desserts really lemony.

Really good but needs a tiny bit more coffee.

Black Magic Cake

Fantastic. I didn't have buttermilk so I soured some milk with a tbsp of vinegar. This cake was so good that I made it again within the week.

Roasted Chicken with Risotto and Caramelized Onions

Reviewed: Nov. 22, 2007
This recipe was easy to prepare, but I found the balsamic vinegar a bit strong. Next time I'll halve the vinegar and add some vegetables.

Skillet Pork Chops with Potatoes and Onion

Reviewed: Oct. 22, 2006
Very good, lots of flavour. There's nothing really special about it, however. I should have added more broth during cooking, as the meat wasn't as tender as I would have liked.

Cucumber Peanut Salad

Reviewed: Oct. 22, 2006
really good. I did sub olive oil, and I also added some minced red onion. I diced the cucumbers into really small pieces so the whole thing had a salsa-like texture.

Beef Bourguignon III

Reviewed: Oct. 22, 2006
Really good, although fairly plain. I did need more wine and more broth, and - as another person commented - the garnish was the best part. Next time I'll just add more broth and lots of vegetables and make a stew.

Cuban Shredded Pork

Reviewed: Oct. 22, 2006
Very good recipe, and super easy to make. It did turn out a tiny bit dry, which might be solved with some additional oil.

Easy, Cheesy Zucchini Bake

Reviewed: Oct. 22, 2006
Not bad. I added garlic, oregano, basil and onion powder, and subbed cheddar for the Mexican blend, and might add spinach if I make it again. I realize this totally takes the recipe in another direction, so I am going to try it again and add peppers, cumin, chili powder, etc. All in all, a good basis.

Highland Toffee

Four stars for the original, FIVE for this recipe with the following modifications: - butter instead of oil (yum, why wouldn't you?) - four minutes extra in the oven - milk chocolate melted on top - half an hour in the freezer before cutting

Apple Cheddar Cheese Pie

Reviewed: Oct. 22, 2006
It was impossible to roll the crust to the desired thinness without it falling apart, and I was hesitant to add more water for fear that it would be tough. So it was a bit thick and doughy - scone-like, our tasters said. I wouldn't make this again ... the cheese/apple combo is a little weird.

Jamie's Cranberry Spinach Salad

Reviewed: Sep. 14, 2006
This was so disgustingly sweet that I couldn't eat it, and although my husband finished my portion with some enthusiasm, he did agree that the sugar could be reduced.

Baked Dijon Salmon

Reviewed: Nov. 23, 2005
Incredible. Very easy to prepare. I didn't measure exactly, just eyeballed the amounts, and I left out the breadcrumbs as several others had said it made the salmon soggy. It turned out perfectly. I think this topping would go well with chicken too.

Baked Zucchini Chips

these weren't bad. Next time I'll try cooking them a bit longer as they weren't especially crispy. They could also use a few more spices. I added basil and garlic.

Maple Salmon

Reviewed: Nov. 17, 2004
this is a really brilliant idea that works for chicken as well as salmon. I actually flipped the ratio of syrup to soy around, as it was a bit too sweet. Sauce cooks up really nicely and mixes in well with roast vegetables.
