Quick Coconut Muffins

My work was having Hawaiian day and I had to find a quick tropical inspired dessert recipe. I came across this one and modified it as follows: substituted orange juice for water, no nuts, 2 teaspoons butter extract instead of rum and coconut. I also made a frosting since this is more of a cupcake recipe than a muffin recipe. My frosting consisted of a tub of Duncan Hines vanilla frosting with 1/4 cup orange juice added plus a splash of dark rum. For decoration, I toasted coconut and added on top of the cupcakes. Overall my cupcakes were a yummy success!

Tortellini Salad I

I love this recipe! This is my favorite pasta salad...EVER. My modifications are as follows: tri-colored tortellini!, red onion, garlic and herb feta, red wine vinegar, yellow bell pepper instead of green, double the hot sauce, juice of a whole lemon, fresh oregano, fresh thyme, fresh garlic, nix the mint, nix the olives.

Maria's Stuffed Chicken Breasts

When making this delicious recipe, I decided it would be a good idea to pound out the chicken breasts. I also modified this recipe by reducing the spinach, using fresh garlic cloves, and adding italian seasoning. The sauce I used was very interesting. I used a jar of Alessi brand pasta sauce that was super spicy and mixed it with some homemade sauce. If you haven't made this recipe, I absolutely recommend it...(even though I didn't taste it, I'm veg). I made some spinach and ricotta stuffed shells to accompany this dish.

This recipe is so easy that I'm pretty sure I could eyeball everything next go around. I absolutely love this simple and delicious recipe. My only modifications were adding more brown sugar and a big pinch of cinnamon. P.S. Using Jack Daniels reeeally makes it yumm-O!
