Playgroup Granola Bars

Every morning for breakfast I eat granola and I love the recipe "Megan's Granola" here on AllRecipes.com. However, I'm pregnant and need something to eat sooner in the morning, so I thought I'd try a granola bar recipe. This one is great. It's healthier than a few of the others on this website, and you can make it even more so. I use 1/4 cup of applesauce and 1/4 of vegetable oil to save some fat grams. I also like to mix it up with dried blueberries or craisins instead of raisins and added and add in some nuts. Yum!

Megan's Granola

I make a variation of this recipe 1-2 times/month and we eat it every morning for breakfast! I found it wasn't quite clumping enough, so I have decreased it to 6 cups of oats, everything else the same. Delicious! I vary the nut and dried fruit combination depending on my mood and the season (dried blueberries and almonds in the summer, dried ginger and cashews for fall, etc.) I have shared it with so many people and everyone is amazed at the flavor!

Todd's Famous Thai Peanut Sauce

Great sauce! You can use this as a sauce for a Thai style pasta, but you probably want to add about 1/2 cup chicken/vegetable broth to it when it's in the food processor so it will distribute better through your pasta. I like to saute cubed tofu (1 inch size), shredded cabbage and bean sprouts, add a package of cooked rice noodles, and then toss with this sauce. Delicious, filling, healthy and easy!

Barley Salad With Almonds And Apricots

A great healthy, hearty flavorful salad. I made the barley in my rice cooker (1 cup barley, 2 cups water, normal rice cooker setting) which saved me a lot of time and labor making this super easy. I reduced the other ingredients by about 1/3 as well. Because it's barley based, it is much more filling than I expected so one person won't need much! Definitely a keeper recipe!

Easter Breakfast Casserole
