Brunch Pizza Squares

I added an extra egg and used both mozz & cheddar. I doubled the recipe, making two pans & thought it was just as good as leftovers as it was originally. This will be a regular with my family.

Easy Slow Cooker Carne Guisada

Guacamole

This was THE BEST Guac I've ever eaten. My daughter and I ate the whole thing. I did everything but the tomatoes (I'm allergic). This is now my only Guacamole recipe. YUM-O!

Pork Medallions with Port and Dried Cranberry Sauce

I originally saw this in a Cooking Light magazine and made it for some dinner guests. We're sauce people, so I doubled the sauce and thought that it was just right. It was good, just nothing I'd make a again.

Broccoli Hamburger Casserole

I was looking for something quick & easy - and this was it. Based on other reviews I modified it this way. I added some minced garlic & chopped mushrooms to the meat & onion mixture. Additionally, I topped it all off with Fried Onions. My family dug right into this dinner. This isn't going to impress the socks off your dinner guests, but for a quick & hearty dinner for the family, it was great.

Blueberry Custard

It came out more like flan than it did a traditional custard. It was very good though. My kids really enjoyed it. The top got a little brown, but that didn't detract from the taste. The flour also seemed to settle a little at the bottom, but that made for almost a crust. I would make this again.
