Smothered Beef Short Ribs

Reviewed: Feb. 24, 2013
I made this for my Sunday Dinner rather than grilling short ribs like I usually do. I must say I will definitely make this again! I follow the recipe to the teeth except I thicken my gravy with a little flour and water mix. I served them with black eye peas and yellow rice.My huband loved it. Will have the leftovers with mashed potatoes like the other reviewers. Try it I know you will love it too!

Pumpkin Muffins with Streusel Topping

Reviewed: Oct. 9, 2012
Anyone who knows me knows I love to cook. My husband has been looking for a good pumpkin muffin. He was disappointed in Dunkin Doughnuts when he tried their pumpkin muffin. So I decided to give this one a try for him. This recipe was easy and taste awesome! He loved them as well as my daughter! You can't go wrong making theses muffins. Only thing different I did was to add a little more pumpkin spice, oatmeal and double the streusel topping( a must have). I am definitely pinning this one on pinterest.com!

Love the receipe Kelly!! Thank you so much. I used a rosemary garlic seasoning I had on hand( I am the spice queen), fresh minced garlic, diced onions, crushed black pepper and onion powder. I tossed them in a large zip lock like so many said too. It was delicious!!!!!!

Honey Cornbread

Reviewed: Oct. 5, 2009
I made these today and oh boy! I will NEVER buy another box of Jiffy. I did exactly as recipe called for except when they were almost done I put melted I can't believe it's not butter on top of each muffin. WOW! I will use this for my cornbread stuffing also. Went very well with my homemade vegetable soup. 5 stars could be more.

I have made this salsa over and over. We cannot get enough of it. My mother in law has even threaten me to save some for her when she visits in October. Guess I will have to freeze some for her. The only thing I added was garlic and tomato paste like one viewer said. LUV IT!!!!

Hugh's Dry Rub

Reviewed: Apr. 5, 2009
If I was standing next to Hugh I'd give him a great big hug! This rub is fantasic! The only change I made is instead of table salt I used Kosher coarse salt. It was not salty at all. I grilled some country ribs and it was delicious. Some I add BBQ sauce and some I left memphis style. This will be my rub of choice! Thanks Hugh for sharing your recipe rub. :)

I made this wonderful sandwich with lite mayo instead of butter. I served it with tomato basil soup and the hubby was in heaven. He said he has never had a grilled cheese sandwich that tasted so good. I also used colby, cheddar and monterey jack cheeses.

Paella I

Reviewed: Jan. 20, 2008
Can you say good eating? I made this today for company. They wanted the recipe right away. The hubby kept asking is it ready yet? I addition to the recipe I added scallops and lobster tail. I also added 2 tablespoons of sofrito(recipe here too). Left out the wine and used a 14 oz can of diced tomatoes. Excellent!!!

Savory Crab Stuffed Mushrooms

Reviewed: Dec. 31, 2007
I added chopped garlic and grated parmesan cheese. I also added some mayo. I did not use the wine because the mushrooms would make enough liquid themselves. These were great! Did not last too long. Will make this again!

Rum Cake II

Reviewed: Dec. 31, 2007
This was a wonderful cake. I don't know what the other reviewers did but mine came out perfect. Great with eggnog ice cream. The cake was light not dense. I sifted my dry ingredients twice. I also made sure that the butter and sugar was nice and fluffy. When making the cake you must take you time. The other trick is to poke enough holes in it so the glaze goes through it. Remember this is a homemade cake, not a box mix. Thanks for a great recipe!
