Pineapple Enchiladas

I used Old ElPaso enchilada sauce, I don't know if that was the problem or not, but this was so horrible I couldn't eat it. I felt the texture was disgusting. Sorry! I love pineapple on pizza but this didn't come close at all.

Crab and Swiss Quiche

Gravy Baked Pork Chops

It was a good recipe but I made some changes. I dredged the chops in egg and then rolled it in a combination of seasoned bread crumbs and corn flake crumbs for breading. I omitted the water totally so the gravy would be thicker.

Marinated Baked Pork Chops

I marinated the pork chops for half a day and it didn't seem to matter. I thought they turned out very dry and almost flavorless.

To Die For Blueberry Muffins

These muffins had great flavor--no butter needed!! The key to good muffins is to not overmix them. Stir the egg up after you add it to the oil and milk, that way it doesn't take much stirring after you add it to the dry mixture. Be careful not to put too much mix into each liner before you add the topping, mine puffed up pretty high. Yummy!

BLT Pasta Salad

This is an easy pasta salad recipe that goes great at any cookout. I substituted green onion to add a little color to the salad. I also cut grape tomotoes in half instead of using regular ones to make the prep time faster. This is delicious!!
