Broiled Tilapia Parmesan

Reviewed: Oct. 5, 2006
This recipe had great flavor- not too salty or greasy. My husband had never had tilapia and loved it. The only problem I had was the fish fell apart before I even put the sauce on- any suggestions? Definitely a keeper.

Family's Creamed Spinach

Reviewed: Sep. 1, 2006
My favorite new vegetable! Super yum. I used the low-fat cream of celery- so it was low fat AND low carb. Next time I will decrease the onion and saute for longer, a few shakes of creole seasoning- perfect creamed spinach.

King Ranch Chicken Casserole III

Reviewed: Aug. 29, 2006
I don't understand the hype with this one. Boring, soggy, bland- and I even used halapeno cheddar. And all the King Ranch Chicken Casseroles look approximately the same. I'm going to try the burrito pie next time.

Tuna Broccoli Roll Up Casserole

Reviewed: Aug. 29, 2006
This was absolutely horrible. Nothing about this recipe was complementary. Broccoli and tuna are two very strong odors and tastes, and are hard to combine. Plain old tuna noodle casserole is much better. Will NOT be making this one again.

Fantastic! The flavor is lovely- I doubled the recipe and added creole seasoning. A new favorite.

Amish Yumazuti

Reviewed: Aug. 15, 2006
This was a great recipe, but I too altered it with twice the Rotel and cheese, I added crushed red pepper and creole seasoning- spicy and yum! I only had ground venison- it was perfect. I think next time I will use less noodles and maybe more meat.

Healthier Hot Legs

Reviewed: Jul. 27, 2006
I loved this dish, and it wasn't as hot as I thought it would be considering it had a whole bottle of hot sauce in it. The chicken took longer than the directions stated to cook, and the sauce never got really thick and sticky. But it was so yummy, especially with ranch and blue cheese. I will definitely make this again and experiment with different hot sauces. Maybe those of you who love heat should try a mango habanero.

Quiche (Southern Egg Pie)

Reviewed: Jul. 25, 2006
My husband LOVED this dish. Super fattening- next time I'll try low fat cheese and lower-fat sausage- maybe turkey sausage.

Creamed Spinach with Jalapenos

Reviewed: Jul. 25, 2006
Tasty, but way too greasy and fattening. There must be a way to cut some butter and calories. A little more time consuming than most creamed spinach dishes.

Daddy's Sloppy Soup

Reviewed: Jul. 20, 2006
Good soup base, needs lots of seasoning. I didn't like the whole tomatoes floating around, I had to fish them out and whirl them in the food processor. Makes a lot! Good to freeze.
