Green Chili Roast

Even on high it took more than 4 hours to become tender, so expect that possibility. As it had not been reviewed yet, I asked the family and pretty much everyone thought it was just Ok.

Roasted Lemon Herb Chicken

This was quite tasty, having to transport it and smell it the whole way was positively torture. It was very easy and a great return on the time/effort. Make sure you have bread as the drippings/sauce is delicious.

Sugar Cookie Cutouts

I'm terrible with cookies, but these were absolutely perfect. The dough was easy to put together and rolled out and cut beautifully. Even in my wonky oven they cooked right at 14 minutes. Easy peasy and I'll definitely make these again.

Easy Peach Cobbler II

Peaches just arrived and they were fantastic in hand but were getting to be a bit overripe. I just made this, I had to substitute pancake mix for the self-rising flour, other than that, followed recipe exactly. It is rather wet, which may be because I used fresh peaches, but oh my goodness, this is fantastic! And so easy! It is still warm in the bowl next to me as I'm writing this. Thank you so much for the recipe.

Mom's Stovetop Pork Ribs

Country style ribs go on sale often but I've never had a way to make them. This recipe seemed pretty simple and straight-forward. Wow, was this good. As others noted, it may take longer to cook, however, the dish is absolutely delicious. I probably could have let it boil down more, but I chose to add a bit of flour and make it more gravy-ish. Fantastic with rice. I'm pretty sure the leftovers in the fridge are even tastier today. Thank you for an economical, easy and yet very tasty recipe. Update: I make these as often as possible, they are addictive!

Chocolate Pound Cake III

I don't have a bundt pan, so I used two regular loaf pans. I also used real coffee that was rather strong. The cake came out absolutely perfect. Chocolate pound cake is my favorite and this one was extremely moist and delicious. I topped a slice with strawberries in balsamic vinegar and it was absolutely heavenly. The only down side? It is utterly possible to eat the entire thing yourself and stab anyone who attempts to eat it also.

French Bread Rolls to Die For

Wow! What an apt title. I didn't get out 18 rolls, but I got 12 rolls of varying sizes and 3 bread stick thingies that I rolled in garlic, parmesan and salt. I did use the egg wash and the rolls came out beautifully. We toasted them with smoked gouda and it honestly tasted like something we'd get at a restaurant. This was my first true success with bread and it seemed pretty darn fool proof. I'm sure I over-handled it, over-kneaded it and probably over cooked it a bit and they were still fantastic.

Baked Teriyaki Chicken

Fantastic! I usually marinade veggies to go with it. By the way, make the marinade, put it on the chicken and throw it in the freezer. It makes for a great, easy meal.

Sicilian Sausage Soup

I made this tonight for the first time. It is also my first soup ever. I did add zuccini and spinach to the soup, but other than that, I followed the recipe. My husband said it was the best soup he has ever had in his life. I found it to be very hearty, tasty and extremely easy to make with items typically on hand. A reasonably stocked pantry can whip this up easily.

Shredded Beef Enchiladas

I made this recipe as indicated except I used a mexican cheese blend and I used my fryer to cook the tortillas. This made 18 enchiladas. I really wasn't sure what to expect and was quite surprised with how yummy this was. The cheese filling/meat really melded together after cooking and the taste was just wonderful. I'm so glad I have 12 more for the freezer. I did make the red enchilada sauce to top it with. Edited to add: I put these in the freezer individually wrapped and they were extremely handy, quick yummy meals. I plan on keeping a stock of them in my freezer. Fantastic!

Chicken In a Tarragon Sauce

After looking over the recipe, I knew I'd be serving it over rice and was concerned about everything being too pale. I pounded out some chicken breasts and deep fried them with italian bread crumbs. Instead of wine, I used sherry. I added just a tiny bit of fennel seed to it, as the onions and tarragon was cooking, it smelled like it would be a good fit and it was. I set the fried chicken over rice and then spooned over the tarragon sauce. The crispiness of the chicken really helped this recipe not be so...homogeneous.

Beef Stroganoff III

I did the suggested adding worcestershire, garlic and using sherry instead of wine. I found it pretty easy to make, it came together rather nicely. The long and seemingly endless simmering time made it easy to work around. My husband rated this a 4/5, I'd give it a 3/5, I felt it was missing something. No idea what, however.

Mongolian Beef II

For some strange reason, I ran out of soy sauce and couldn't use the amount called for. Even given that, I was happily surprised at how much it tasted like it was supposed to. If I could get a good handle on chinese food, my husband would be thrilled. This was a great start.

Stuffed Pork Chops III

I made this with a few of the modifications mentioned, cooking the onions, adding thyme, adding garlic, adding sherry to the stock, making a gravy with the sauce. It was very, very easy to do. It came out very tasty, almost thanksgiving-ish. I craved cranberry sauce with it. My husband said it was very yummy also.

Chicken Paprikash II

Made as indicated, except possibly more garlic. I went easy on the red peppers because I'm feeding a toddler. I'm on my third bowl of this today, it was delicious! The suggestion to have nice crusty bread is a good one. I used penne pasta which worked great for holding onto the sauce. Definitely a favorite, and easy to do.

Salsafied Chicken and Rice

My husband went bonkers over this. He says it is reason to keep a supply of sour cream handy. Instead of using instant rice, I make regular rice and just mix it together at the end. He actually gets excited when I make this. Very Odd. I suspect there is some sort of hidden male hormone triggering ingredient in this. ;)
