Mediterranean Summer Tomatoes

Great recipe and simple too...Perfect for Summer..I used Olive Oil that has been flavored with a crushed garlic clove and it added just a little extra.

Over the Fire Scalloped Potatoes

This tastes great!!!! I I put heavy duty tin foil in a retangular baking dish and layered all of the ingredients, except the cheese...folded it up (poked 2 steam holes in top of foil)and baked for about 40 min. or so at 350...The time depends on how large or small the potato's are diced..The smaller the dice, the less cooking time...then I opened the package, springkled the cheese on top -- along with some grated parmesean cheese and let it bake a little longer until the cheese was melted and bubbly...The flavors are really terrific, and no messy cleanup -- just serve and toss the foil.

Red Garlic Mashed Potatoes

To make it a little easire, i crush several cloves of garlic and add to the cooking water with the potatoes..when done, drain and mash all together...the garlic will be tender & sweet and it's all right there...Also, I heat the butter and cream some before adding to the mashed potatoes.

California Italian Wedding Soup

This recipe is one of my all time favorites...The only change is that I use Vegetable broth instead of Chicken broth and I chop the basil quite fine...Sliced Mushrooms can also be added to the broth.

Mushroom Stuffed Beef Rouladen

Add some finely diced onions to the mushroom mix and serve with garlic mashed potatoes with diced chives or green onions on top...We also add some grated parmesean cheese to the potatoes.

The Best Slow Cooker Cream Corn

Great recipe...We're big onion fans in our house, so just before service we sprinkled chopped green onions on top...We did adjust the sugar down a bit, but overall great taste and perfect for a pot luck etc.

I changed it to more of an Italian flavor...Basil and a touch of Oregano instead of the Cummin...At serving, sprinkled with Parmesean Cheese and finely chopped green onions..Served with crunchy Garlic Bread

I used boneless chicken thighs instead of the legs, added garlic (isn't everything better with a little garlic?)and instead of carrots, I used water chestnuts...I also used Bok Choy instead of regular cabbage.

Baked Cherry Tomatoes with Garlic

The only thing I added was I used basil flavored olive oil...This is a great recipe..A friend said she sprinkles parmesean cheese on top right out of the oven....If using as an hor doeurves, just put a pretty toothpick into each one.

Pan-Seared Chicken Breasts with Shallots

My family prefers dark meat so I substituted chicken thighs and they were terrific...The only other change I made was that I added some grated onion to the chicken stock...and a little dijohn mustard to the sauce for a little zing...Adding mushrooms also is good

Hamburger Steak with Onions and Gravy

Good recipe, but using fresh herbs and spices really helps...fresh grated garlic, minced onions or grated onion, fresh cracked pepper etc. really makes a big difference...a little chopped parsley also adds something.

Sweet Maple Pork Chops

We tweaked this recipe some...used much less oil for frying, added some grated Parmesean cheese to the oats for dredging, replaced the maple syrup with a tablespoon or so of Dijon mustard and added more mushrooms...sort of defeated the "maple" aspect, but since there was basil and garlic we made it a little more Italian

This is a great recipe...It's also good with any number of fresh vegies -- asparagus, leeks, and even fresh brussel sprouts cut in half....Make sure the stock you use is warmed before adding it to the rice...This can also be made with vegetable stock...You can also add a little chopped, seeded tomato on top just before service.
