Spinach and Mushroom Quesadillas

Add some fresh grated parmesean cheese to the cheddar....You can also saute some finely diced onions to add to the mixture.....very good

Stuffed Mushrooms Casino

Tiny salad shrimp can also be used, either instead of the clams or with them...please use real bacon instead of the bacon bits, it really does make a difference..Making the mixture several hours ahead helps to blend the flavors..sprinkle with a little paprika just before baking

Skin-on Savory Mashed Potatoes

Used Yukon Gold potatoes, and put some peeled garlic (to taste) into the water the potatoes were boilng in...Mashed it all together and added the rest of the ingredients...Sprinkled a little parmesean cheese and paprika on top just before serving...Can also sprinkle on some finely chopped scallions for a little extra flavor and color

Ginger Steak

Try fresh grated ginger -- start w/ a small amount and then increase to taste..Ginder lasts quite a while in the freezer -- just break off a piece to use and put the rest back in the freezer, tightly sealed...Grating on a microplane is perfect...Also, add a little garlic for more ooomph

Russian Mushroom and Potato Soup

A really terrific recipe..The only change was that I used 1/2 chicken broth and 1/2 vegetable broth...The ones in the carton are the best...I also added more mushrooms and potatoes and did like one other rater sugested, I smashed half of the potatoes before combing all.

Good recipe, but it definately needs some crushed garlic...Mushrooms are a good addition if you like...Serve over fluffy rice with chopped scallions.

Cheesy Macaroni and Beef Casserole with Thyme

This is a very good recipe...The only changes we made was to use evaporated milk instead of regular milk, and we added Panko bread crumbs mixed with grated paremesean cheese and a little paprika for color on top before baking..Also, make sure the flour is fully cooked - a couple of minutes before adding in the cheese.

Good recipe....just add some fresh grated parmesean cheese on tope just before service...We prefer the white shoepeg corn, and we tend to leave the potatoes a little lumpy..May not sound great, but it is...My family loves the textures.

Brussels Sprouts with Mushrooms

We prefer the Brussel Sprouts somewhat less tender at the start...We add some crushed garlic, and just steam the Brussel Sprouts about 5 - 6 minutes....Then saute all in a large frying pan till they are crisp tender...Also, can add some halved cherry or grape tomatoes at the end and sprinkle with parmesean cheese.

Before sprinkling the ham w/ brown sugar, brush on some Dijon or grainy mustard on both sides, then continue on with the rest of the recipe...Adds a little extra "kick"

Easy Fried Spinach

Way to much oil and butter...I don't add the garlic, crushed or sliced, until some of the spinach has wilted down some so that the garlic doesn't burn...Also, add some fresh sliced mushrooms and lots of fresh cracked black pepper..be sure to use a very large frying pan so there is room to keep adding spinach as it starts to saute...Salt shouldn't be added until the very end...Sprinkle some parmesean cheese on top right before serving.

Broccoflower® Risotto with Wild Mushrooms

This is a great recipe...It's also good with any number of fresh vegies -- asparagus, leeks, and even fresh brussel sprouts cut in half....Make sure the stock you use is warmed before adding it to the rice...This can also be made with vegetable stock...You can also add a little chopped, seeded tomato on top just before service.

Sweet Maple Pork Chops

We tweaked this recipe some...used much less oil for frying, added some grated Parmesean cheese to the oats for dredging, replaced the maple syrup with a tablespoon or so of Dijon mustard and added more mushrooms...sort of defeated the "maple" aspect, but since there was basil and garlic we made it a little more Italian
