Good recipe -- just added sliced onions, and omitted the caraway seeds....And as I always seem to do, added some grated parmesean cheese just before service

definately add some garlic, and don't slice the tomatoes to thin or they will fall apart -- We like about 1/4th to 1/2 inch thick.

I cut the tomato's a little thicker and add some motzerella cheese, and a little basil...This is a great side dish and some family members who aren't to crazy about tomato's really liked these

Mushroom Rice

Use Crimini mushrooms (Baby Portabello's) and beef broth...Double up on the amount of mushrooms...Vegetable broth can also be used....Top w/ grated parmesean cheese just before serving and sprinkled with some snipped chives.

If you like a little chunkier soup, add a regular can of diced tomatoes w/ onion & basil...a nice addition....and put some grated parmesean cheese on just before serving.

Ham and Potatoes Au Gratin

Par-boil the potatoes first to help it along...For the topping combine some Panko bread crumbs, parmesean cheese and paprika with a little melted butter and put on top -- makes a nice litle additon..We also use more onion, at least 1/3 to 1/2 cup -- we like a real onion flavor.

try 1 to 2 quarts of low sodium vegetable, chicken, or beef broth instead of the water and bullion cubes..Can also add sliced mushrooms for a little different flavor.

Potato and Onion Soup

Made some changes...Used 3 - 4 large red potatoes, either 2 qts of vegetable broth or 1 qt water & 1 qt veg. broth, use evaporated milk, and lots of fresh cracked pepper...We like it a little chunky so didn't blend smooth, and addded some fresh grated parmesean cheese right before serving, along with the chives...Can also add some fresh mushrooms for added flavor

Mushrooms and Spinach Italian Style

Use a little less olive oil, and start with just 1 tbsp balsamic vinegar, and 1/4 cup wine -- more can be added if you like..keep tossing spinach as it starts to wilt to keep combined with the mushrooms and onions, and sprinkle on some parmesean cheese just before serving....I will also add some diced and seeded Roma tomatoes at the very end before adding the cheese and serving.

Add some grated parmesean cheese to the mixture...Also is good on cocktail rye bread or sourdough bread cut into small squares...Can be put under the broiler, just keep an eye on them.
