Sun-Dried Tomato Pesto

Great recipe...Don't forget you can add cooked, diced chicken or pork; shrimp, clams etc...We like things more garlicky so we use more garlic...If you want to thin it out any, use a little of the pasta cooking water....This can be adapted to so many things

Fast and Easy Spinach with Shallots

Use a combo of butter and olive oil...add some crushed garlic to the shallots and add some fresh mushrooms...When done, sprinkle with grated parmesean cheese...remember, spinach cooks down to pratically nothing so if you want a lot, you definately need to cook a lot.

Tangy Garlic Steak

This is also good for chicken, pork, vegies and seafood -- however, if you're marinating seafood, only marinate for a max. of a couple of hours, otherwise the seafood gets mushy.

Special Lobster Bisque

We didn't use celery salt, we added a bay leaf, and cut the butter and flour down to 4 tablespoons each...used 1/ & 1/2 and sprinkled with chives and grated parmesean cheese right before serving...Good comfort food

Creole Seasoning Blend

For lower Sodium content, reduce the amount of salt to your preference...I only use about 1 TBS or so....This really is a great blend.

Herbed Mushrooms with White Wine

Add a little butter near the end to finish the dish -- also, use a variety of mushrooms for a little extra boost...I don't salt the mushrooms until the very end, as it draws out too much moisture during the saute process..sprinkle with a little fresh chopped parsley and if you like, a little grated parmeseean cheese.

Irish Champ

There is another Irish dish called Colcannon (not sure of spelling), it's the same as this,only you add sauteed shredded cabbage to the mix -- also like to add just a little grated garlic.

Remember, when working with beets, they stain big time -- I use latex gloves when handling them and never cut them on a wooden cutting board -- use a plastic one or paper plates

Avocado Salad

Left out the green pepper, but added a little crushed garlic..I squeezed the tomatoe seeds out so it wasn't so watery, used some red wine vinigar instead of the lime juice and added a little extra virgin olive oil.

Inside-Out Manicotti

Add some fresh garted parmesean cheese to the ricotta and motz. cheese combo...Can also add some thawed, well drained spinach to that mix...Added some fresh mushrooms and only added 1/2 tsp nutmeg...Can be tweaked so many ways, but this is a very good dish.
