Crustless Cranberry Pie

My daughter has nut allergies so I made this using vanilla extract instead of almond and just omitted the walnuts. It was delicious this way too but nut free!

Whole Wheat, Oatmeal, and Banana Pancakes

These were good. You could probably cut down on the sugar if your bananas are really ripe. I omitted the dry milk and it was just fine.

Best Butternut Squash Soup Ever

So easy and had a rich taste despite having no cream, only a little butter. I used Vadilia onion. I accidentally left out the allspice and cumin, but it was delicious anyway.

How can you go wrong with cream soup? I actually skipped the simmering for 30 minutes because I accidentally added the cream with the broth. Turned out great anyway. Great way to use herbs and spinach from the garden!

Brown Sugar Meatloaf

As a newlywed, I made a terrible meatloaf. Due to my husbands reaction to that, I've waited 15 years to attempt meatloaf again. If this one wasn't good, I would never make meatloaf again. Well, this recipe was delicious and more of this meatloaf will be in our future. I put the sugar/ketchup mix on top of the loaf instead of at the bottom. It came out perfect.

Baked Haddock

I used frozen talapia for this. Instead of bread crumbs, I used crushed ritz crakers, omitted the salt and cooked on a rack. They turned out nice and crispy and my kids thought they were "fish sticks." Half the milk would have been plenty for the dredging.

Easy Garlic Broiled Chicken

My husband said he was adding this to his list of stuff he really, really likes. I might agree with the low sodium soy sauce suggestions. Flavor was great, but a bit salty. Otherwise delish!

Snickerdoodles III

I lover snickerdoodles, but hate shortening, so I tried these because they use butter. They tasted great and were fluffy when cooked, not flat. Perfect.

Pumpkin, Sweet Potato, Leek and Coconut Milk Soup

I didn't have fresh pumpkin so I used a couple more sweet potatoes and then added 1 can of pumpkin when I added the coconut milk. I also pureed in a blender for a smooth consistency. I added the additional spices as others did. Maybe it would have more flavor if the sweet potatoes where roasted first? Just ok.

Zucchini Cake II

Since I had zucchini coming out of my ears, I doubled this and it made a 4 quart pan AND 2 dozen cupcakes. Because of allergies, I was compelled to substitute chocolate chips for the nuts :). The chocolate chips sank to the bottom, but still tasted great. Topped with a thin layer of cream cheese frosting. I thought it was a little heavy on the oil and could have used a little more spice.

Blueberry 'S' Pie

I thought this was amazing! The best part of a crisp (the oaty crust) on the top AND bottom. Yum! I used 2 pints of fresh blueberries tossed with 2 T. sugar and 1 T. flour for the filling. It came out perfect.

Whole Wheat Pancakes

Wow!!!I was looking for a whole grain pancake that was healthy but not heavy, and this is it! They were very light (but very rich because of the butter). Instead of buttermilk, I used about 2 cups of plain yogurt mixed with enough milk to equal 2 1/2 cups. Served with strawberries, bananas, and whipped cream. What a treat!

Strawberry Muffins

I changed quantity to 16 and it made 24 perfectly shaped muffins. Fresh strawberries worked great, but I thought recipe could use a little extra flavor - maybe cinnamon or vanila or almond?

Meg's Chocolate Chip Oatmeal Cookies

These are the lightest, fluffiest oatmeal cookies I've had. I only had dried out light brown sugar, so I used that but also added a few tablespoons of molassess and they came out great!

Chicken Avocado Pizza

This was tasty and made a beautiful presentation. I thought it was almost too rich with that much avocado. I might spread it on thinner next time or plan on eating smaller portions - this would be a great appetizer cut into small squares.

Beef Barley Lentil Soup

When I made this soup, I cooked it on high for 3 hours and then added only 1 can of tomatoes and (quick) barley, then cooked on low for 2 more hours. It was kind of lacking in flavor so I added some thyme and at the table, lots of salt and pepper. I wasn't overly impressed the night I made it, but the next day, the broth had thickened up nicely and it was fabulous reheated!

Bean Soup With Kale

I was pleasantly surprised by this too! I used canned tomatoes and bigger cans of beans than it called for. I expected the kale to wilt more like spinach, but it held it's shape, so be sure to chop it as small as you want it to be when you eat it (I left mine too big). Otherwise it had great flavor.

Pizza Carbonara

I was looking for something different pizza-wise and this hit the spot. Great flavor combo. I used homemade crust (which makes any pizza better!) and black pepper instead of white. It probably would have tasted similar with mozzerella, but the montery jack was a nice change. Seemed a little greasy, but I guess that's to be expected with so much bacon and cheese - but that's also the reason it was oh so good!

Extreme Chocolate Cake

Wow! The is the best from scratch chocolate cake I've made. I choose it because I had everything in my pantry - no special trips to the store. It was easy peasy and turned out fabulous. I used a different chocolate cream cheese frosting and split each layer to make it a four layer cake. It was the perfect birthday cake!
