Enchiladas

I was raised in So. California and have had plenty of "authentic" style enchiladas. Of course this is not that authentic. But I love it. My Irish mom made it and called it Gringo style. I prefer the flour tortillas over the corn. I also put minced garlic, 1 small can of chopped mild green chilis cooked with 1 pound of lean ground beef and onion. I mix sharp cheddar cheese and sauce inside with meat mixture, used burrito size flour tortillas. It made 7 large enchiladas. I put sliced olives on top of the cheese before baking. Yum!

BBQ Chicken Sandwiches

I liked this recipe. I did what others suggested and used tomato sauce instead of ketchup. Also skipped the celery for my own liking.Came out good. Thanks!

BBQ Sauce

Another sauce to add to my collection of BBQ Sauce Recipes. It's a good base recipe. You can go anywhere with this recipe. Tweek here and there. I made double batch. Added some onion flakes and a little bit of minced garlic, a little worsteshire. I also simmered it a little while to thicken up just a bit. Yum!

Chipotle Sauce

Short (recipe) but perfect just like it is. Especially to whip up real fast. And when you can't eat tacos or burritos without it again. You'll like how fast it is to make and ohhh so simple. Thanks!

Guacamole

Good recipe. I like my guacamole kind of chunky so I used half the tomato. I only had juice in plastic squeeze bottle in the fridge but like the idea of fresh squeazed. Also I put a blob of sour cream on top and a sprinkle of sliced black olives and a sprinkle of shredded cheddar cheese on top but the actual guacamole recipe is perfect. Thanks!

Southern Pulled Pork

Very Good. I like this recipe. Of course as most cooks like to do is adjust a tad bit to what sounds good to themselves. I had to put some minced garlic, use a little less liquid smoke and just had to have BBQ sauce. But it's a nice recipe that most will like I'm sure. The meat comes out nice if done like this recipe suggests. One other thing is I like to shred the pork and then let it sit in the slow cooker juices for about a half hour or so to absorb more flavor of whatever you put in it.

Nice... I'm like thinking... "Why didn't I think of that?" Thanks for sharing. What a great combo on this simple american fun food. This may sound odd to some but I'd love to try a little avocado with this recipe. Ha Ha! But just as the recipe calls for is XLNT

Remoulade Sauce a la New Orleans

Outstanding. Used every ingredient. I used with shrimp and crab one night and made some more a few nights later and was xlnt with crab cakes. Worth every minute of preperation. Even just for a sauce. Glad I found this one. Some may want to adjust the hot sauce but to me it was great. I also want to make it as a crab and shrimp louie type salad. Great texture. What else can I say. I loved it! Thanks for sharing!

Sausage Gravy III

A good sausage gravy recipe. I tried to make as posted but made minor changes. I prefer using real butter instead of margarine for most everything, but of course you'll probably live longer than me if you don't. Ha Ha! And I like using Wondra flower for gravy's (it's a finely sifted flour to help blend gravies with less lumps.) That's all I did different. It was great! Thanks!

Quick and Easy Home Fries

Good Base recipe. I used canola oil and butter and dried off potatoes with paper towel after cutting them and they were nice and crispy when cooked. The key is not to keep stirring the potatoes if you want them crisp on the outside. I put some diced bell pepper and chopped onions. Also garlic powder and onion salt to taste. Thanks for giving me the idea for a nice compliment with our Saturday morning omelettes and fruit.

Sweet and Sour Chicken III

I loved how this turned out. I didn't have any ground ginger so I left it out. Also didn't have any carrots but added a couple splashes of sesame seed oil and it was real good. Also added some green onion. Even the 10 yr old picky eater liked it. I might add that I put it on a bed of white rice.

Mexican Style Shredded Pork

Outstanding recipe. As I sometimes do I tried to make exactly as the recipe calls for so a fair review can be done. I only put in beer instead of water and a little less cilantro. I was very pleased with this recipe.

Blue Cheese Burgers

Very good. I wanted to try this exactly by the recipe to fairly evaluate as written but I must admit I added a little bit of minced garlic and used more bleu cheese because I love the taste of it. I was very pleased with this recipe.

Best Ever Meatloaf I

A real good base recipe. Had to do things my own way with a few things. I loved the oats instead of bread crumbs. I used 1 pound lean ground beef & 1 pound ground pork as I always do. Spicy Tom's instead of tomato juice. A splash of worsteshire, 2 eggs, 1 tbs of minced garlic. I always grill my onions before putting in loaf so they are cooked well. A small splash of tabasco. Yum!

Adrienne's Cucumber Salad

This simple recipe was just what I was looking for. I first had a cucumber salad like this at a little tai asian chinese place with a mixed asian lady owner. It seemed simple but ohhh soo good recipe. Then I saw this and it seemed to be what I wanted. A little too sweet though. And I skipped the dill. Just added some more vinegar and will use less sugar next time. Also I'm gonna grind a little fresh black pepper on it. Smaller pieces of onion were better too. Yum!

Hamburger Pie

Loved it! Good stick to your ribs food. 10 yr old loved it too. I splashed a little tobasco in it. Not enough to make it hot but enough to ad some flavour. I also put in green beans and corn. and some garli, black pepper, a little italian seasoning, 2 cloves of garlic. Best with home made mash potatoes.

Shepherd's Pie Complete

This was a real good down home filling recipe. I made half the amount because only 2 of us to eat it. Only had 1 can of gravy so made 1 cup beef broth. Added some garlic. Used real mashed potatoes and shredded sharp cheddar. used peas and corn. It did seem a bit soupy so I simmered a bit and added some wondra gravy flour and it was fine. I couldn't imagine using instant potatoes. Or american cheese but that's just us.. I'll be making this one again soon!
