Cinnamon Cranraisin Bread

Great just the way it is! Not too sweet, not too plain. But next time I make it I will double the cinnamon since I love it so much and I would also double the craisins.

Crustless Spinach Quiche

Very nice! Mixture fit perfectly in 12 muffin cups and cooked in about 20 minutes. Mini quiches slide right out and would be super easy to freeze and have on hand. Next time will try with a stronger cheese though.

Tom Ka Gai (Coconut Chicken Soup)

Would recommend adding sugar to taste to balance out the saltiness that other reviewers mention. I believe the Thai people add sugar to their food like we add salt/pepper to ours. At least that's how it is at my local Thai restaurant. I added rice, mushrooms, and red cabbage for extra vitamins and color.

Addictive Sweet Potato Burritos

These were just okay. I added the spices early when I sauteed the onions to "release their flavor" like others recommended but I still thought it was kind of bland (and I'm not a typical spicy food eater either). I'll probably make them again, next time doubling the spices and using SHARP cheddar.

Broiled Tilapia Parmesan

I use tilapia loins straight out of the freezer and cook them in the toaster oven (mine has a broiler feature). It only adds a few extra minutes to the overall cook time. Can't beat that!

Zucchini Corn Fritters

The taste was great. My mom loves them! But I can't get them to stop sticking/burning to the pan. I figure that's either because I'm using a steel pan or because I'm having to use gluten-free flour. Either way, they still taste great.

We didn't like this very much. We make burgers often and do not overcook, but the basil tasted like it was burned.
