Garlic Cheese Chicken Rollups

YUMMY! per other reviews i made my own filling w/cream cheese, fresh chives, parsley, garlic, onion powder, grlic salt. also i used 1 cup parm. cheese and 1/2 bread crombs ( to cut the carbs) and sprinkled shredded mozz. cheese on top the last 10 minutes. my family loved it - definitely a keeper!

Whole Wheat Muffins

i needed a quick, healthy muffin recipe for my 2 stepkids...I only made have the recipe and subsituted a scant cup of Splenda for the sugar and used applesauce and cinnamon as recommended. My kids loved it! It was very moist and had a good light texture. Next time however, I'm going to add more cinnamon and add other spices to make it more tasty. Definitely a keeper!

Easy Alfredo Sauce I

I have been making this same recipe for over 20 years except I add a dash of nutmeg. Always perfect and delish! The key is to use high quality ingredients...real butter, heavy cream, and freshly grated cheese. The dry stuff in the green can will not work.

Best Ever Meatloaf I

I added about a quarter cup of parm. cheese and used v8 instead of tomato juice. The last 45 min of baking I topped it with a ketchup, mustard, brown sugar, A1 sauce. My husband said it was the best meatloaf ever (he had no idea that it had oatmeal in it either!)

Ground Beef Stew

It was perfect for a cold winter's night. I put everything, plus 1 chopped celery stalk, in the crock pot on high and after 3 hours added 1 cup of frozen corn for the last 1.5 hrs. about 30 mins before it was done I tasted it and it was too sweet. To counteract the sweetness, I dissolved 1 tsp of beef bouillon granules in a little bit of hot water and added 1 tbs of cornstarch. I added this to the crockpot and 30 mins later it was the perfect consistency and flavor. I will make it again with these modifications.

Storybook Gingerbread Men

Followed directions as written except I used butter instead of shortening and doubled the spices and added some nutmeg and cloves. I took the advice of many on here and rolled it between parchment paper, but still had trouble keeping the cut out shapes intact. My husband happened to walk by and suggested that i roll the dough in batches, keeping the rest in the fridge, and then take the rolled piece and put back in the fridge for a few minutes. It worked like a charm! I was able to cut and place on a "pam" sprayed cookie sheet without any trouble at all. The cookies are the perfect texture and yummy, though I taste more molasses than spice, even though I increased the spices. Next time I will increase the spices more, but otherwise, it's a keeper!

Corned Beef Hash

this was fast, easy and delish! i used about 6 oz of left over corned beef brisket which i cubed, 1 medium sized potato cubed, 1/3 onion chopped. i put it in the skillet, added i cup beef broth, covered it and 15 mins later the liqued was gone and everything was done. i added about a tsp of oil and crisped it up a bit and served with eggs over medium. this ratio made 2 very generous servings.

Boston Cream Cake

I hate "cake-from-a-box" but this was terrific!!!. I used reduced sugar cake mix (used applesauce instead of oil), fat-free sugar free pudding (used only 1 1/4 skim milk - perfect)and reduced sugar frosting. It didn't taste like a cake from a box nor a low fat/low sugar dessert. I highly recommend this recipe for a quick and easy dessert!

Bar Cookies from Cake Mix

pretty good! per other reviews i used 3 eggs and 3 tblsp water...i also used reduced sugar chocolate cake mix, splenda brown sugar, pecans and chocolate chips...the batter was VERY thick and wasn't sure if this would work...i did have to bake for the full 30 minutes because at 22 min it was still uncooked...it wasn't dry,it was very moist, however next time i think i will either use more butter or add some oil to make it less cake like..

these are perfect! the only change i made was i poured the swntd. cond. milk over the coconut. i baked them for 25min and while still hot i ran a knife along the perimeter to pull the cookie away from the pan. i let cool completely before slicing. they came out perfect!

This was my first time making this and I was pleasantly suprised. I subsituted Splenda for the sugar and I used a mixture of Splenda, cinnamon and ground walnuts for the filling. My stepkids and husband loved them!

Pumpkin Spice Cake with Cinnamon Cream Cheese Frosting

This was excellent! I used reduced sugar yellow cake mix and added a small box of sugar free vanilla pudding and about 1/2 cup of water. Otherwise, I followed the recipe (did increase the spices though) and baked it in a bundt pan for 39 mins. After it cooled I drizzled it with a cinnamon glaze (confectioners sugar, half-n-half, cinnamon) My family devoured it! It was moist and flavorful; it didn't taste like a cake mix creation.

Sloppy Joes II

I only gave this 3 stars because it did require some "doctoring". I browned the beef with 1/2 chopped onion and one minced garlic. Then added the rest of the ingredients as listed, ecept using only 1 tsp brown sugar. I had to increase the ketchup to about 1 cup, increase the mustard by about another tsp. and add some water. The flavor still wasn't quite right so I added 1/2 tsp Italian seasoning, 1 tbl barbeque sauce and some hot pepper flakes. It ended up being pretty tasty - my husband couldn't tell that it wasn't the canned stuff ( I don't know if that's good or bad!)

Braised Beef with Barley

Very tasty! I made some minor adjustments given the reviews and ingredients I had. I used 2 6 oz cans of sliced mushrooms instead of fresh and I used 24 oz. of beef boullion instead of canned broth. Next time I will only use 1 can of mushrooms or use fresh. I also don't think you need 2 cans of broth. After 45 mins, the barley was done but there was way too much liquid so I had to turn up the heat, and cook without the lid for about another 20 mins or so to reduce the liquid. I also didn't add the peas, just steamed some green beans on the side.

Peanut Butter Cornflake Crunch Bars

my husband begged me to make this as this was something he had everyday as a child...i followed the recipe exactly, however only used 7 cups of cornflakes..it wasn't as thick as my hubby remembered so next time i will increase the ingredients to make a full, thick 9x13pan...yummy!

Scalloped Corn and Broccoli

based on the other reviews i was skeptical, however this was terrific. per other reviews, i used a scant tbls of splenda and added a couple of handfuls of frozen corn kernels. also i used the full box of brocoli (i thawed it first). i baked it for almost an hour and it was perfect. my picky husband even had seconds!

Raspberry Streusel Muffins

This recipe produces the best textured muffins ever; moist, light and airy. I followed the recipe exactly and it was wonderful. The nice thing is it's a very flexible base recipe. The 2nd time i made this, I replaced the vanilla and cinnamon with the juice and zest of a lemon and the rasberries with dried cranberries. Again a winning combination. I use an extra large muffin pan which makes 6 muffins and bake for 22 mins.
