Best Ever Meatloaf I

Reviewed: Apr. 17, 2007
I added about a quarter cup of parm. cheese and used v8 instead of tomato juice. The last 45 min of baking I topped it with a ketchup, mustard, brown sugar, A1 sauce. My husband said it was the best meatloaf ever (he had no idea that it had oatmeal in it either!)

Italian Easter Cookies

Reviewed: Apr. 5, 2007
i'm not sure what happened but the cookie dough would stay together. i could barely shape the dough into balls, not alone into ropes. i just tooke them out of the oven the "cookies" are falling apart. i'm thinking there is way too much flour for a mere 1/2 cup of butter

per other reviews, i tripled the bacon and added a minced clove of garlic. also i simmered it much longer covering it with a lid. thank you so much, my kids now actually love cabbage. my 11yr went back for seconds, by-passing seconds of her other favorite side dish!

based on the other reviews i was skeptical, however this was terrific. per other reviews, i used a scant tbls of splenda and added a couple of handfuls of frozen corn kernels. also i used the full box of brocoli (i thawed it first). i baked it for almost an hour and it was perfect. my picky husband even had seconds!

i had never prepared barley before, so i wasn't quite sure what to expect. i read the reviews and other recipes on the site and altered this a bit. i sauted chopped onion, carrot, celery, garlic u til softened. then i added slivered almonds and the barley and followed the recipe from that point on. it was delicious! even my picky, husband & kids loved it!

Favorite Peanut Butter Cookies

Reviewed: Dec. 25, 2006
these cookies were just ehh. like others, i found them to be too dry and crumbly and way to flour-tasting. i increased the pb and used butter instead of marg. like others suggested, however i still wasn't impressed at all.

Whole Wheat Muffins

Reviewed: Dec. 21, 2006
i needed a quick, healthy muffin recipe for my 2 stepkids...I only made have the recipe and subsituted a scant cup of Splenda for the sugar and used applesauce and cinnamon as recommended. My kids loved it! It was very moist and had a good light texture. Next time however, I'm going to add more cinnamon and add other spices to make it more tasty. Definitely a keeper!
