Turkey and Quinoa Meatloaf
Drew, thanks for reiterating that your recipe calls for a freestanding loaf. I have made it several times in a meatloaf pan, but after reading your recent posting, formed it in the pan and then turned the pan upside down so it popped out onto a foil lining. It was even better this way and had a nice crust all around that I didn't get in a pan. I like to add green pepper to the onion and garlic along with 1 cup of fat free cheese to the meat mixture.

Heather's Grilled Salmon
Heather, this is a fantastic marinade. We have to watch our sodium and cholesterol, but your editor's note was reassuring. Even though the fish marinades in a lot of stuff, many ingredients are minimized once the marinade shakes off and the fish is grilled. Use reduced sodium/lite soy sauce without compromising flavor. Thanks so much!

Red Skinned Potato Salad
Fantastic! I looked at other reviews and substituted 4 green onions for the onion. Other recommendations to mix 1 tsp dill with the mayo and add 1 tsp celery seed to the mayo in lieu of the salt were helpful. Hellman's Light Mayo worked for us. Excellent dish - now I'll be asked to make it over and over for a picnic contribution!
