Southern Style Fried Okra

Love this! Although I use about half as much onion as called for in any recipe, then add black pepper for extra spice. If you add some sausage, this makes a great one dish meal. I've also used frozen, pre-breaded okra and then didn't bread the potatoes. It's a flexible recipe.

Broiled Tilapia Parmesan

I made some substitutions based on what I had. Fat-free miracle whip instead of mayo; tub margarine instead of butter; garlic powder and rosemary instead of onion powder and celery salt. The fish was great! Tender, flaky and flavorful. Served over rice w/ a little bit of parmesan cheese sprinkled on it as well.

Jamie's Cranberry Spinach Salad

I make this salad often for potlucks, holidays, etc. Everyone loves it, and many have asked for the recipe. I generally follow the recipe except I toast the sesame seeds w/o butter. I use craisins. Sometimes I'll cut back on the onions or use olive oil instead of vegetable oil. The leftovers are tasty too!
