Chinese Napa Cabbage Salad

This was SOOOO good. The leftovers are even better. It's still crunchy and I think the taste is better the next day. Three things I did differently: Added a bad of broccoli slaw, cooked the dressing and then let it cool (this dissolved the sugar) and we also added bacon crumbles to it. YUMMY!!!

Waikiki Meatballs

This was not a good recipe. The meatballs turned out mushy. I LOVE the idea of meatballs in a sweet teriyaki-like sauce but this is not the one you want. The ginger and milk just ruined any chance of good flavor. I should have know better. Next time I will make my own meatball recipe and put them in a different sauce as this recipe didn't make nearly enough sauce. Just very disappointing.

Best Chocolate Chip Cookies

GREAT recipe! I followed the ingredients to the letter. I did leave mine in the oven longer....I baked them for 14 minutes. They were still pretty blonde, but I hate crunchy cookies so I took them out. Once they cooled they hardened nicely with a slightly crunchy outside and chewy inside. PERFECT! Kudos to Dora!

Old Fashioned Chocolate Cake

I made this for my son's birthday and it is AMAZING!!! I didn't have butter milk so I used leftever whipping cream but I am sure regular milk would work also. It is SO moist!! My baking time was 35 minutes, not 30 but each oven is unique so just make sure you use a toothpick to check doneness! I didn't make the frosting as I had leftover buttercream frosting from the holidays. Next time I will try that recipe too.

Chef John's Ham and Potato Soup

VERY good! I doubled the recipe because it said it made four servings. SERIOUSLY? How big are those servings? I have SO much soup left over. It's very rich also so I recommend just a light salad and maybe rolls with this meal! I did add some instant potatoes to thicken but otherwise I stuck to the recipe and my family loved it! The cayenne definitely added a kick. I added about 1/2 tsp. since it didn't say how much.

Banana Bread, Super Moist

I have experimented with various recipes and found that using oil and wheat flour seem to be the secret to a very moist bread. My family loves this recipe and hopefully, yours will too!

Refried Beans Without the Refry

Wonderful!!! I had a BIG mishap though--my crockpot died midway through cooking so I had to finish this on the stove. It still turned out great!! I only used 2 teaspoons of salt. I put the cooked beans in a colander and then added back a little bit of the liquid while mashing. I also added some kosher salt and mexican blend shredded cheese. My family RAVED about these beans. I will never buy canned again!

Quick Coffee Cake

VERY good! I doubled the recipe. For ONE loaf, I used 1/2 cup sugar. (so z cup for two loaves) I melted the butter and mixed it into the topping instead of drizzling it over the top. I didn't use flour but instead used oatmeal (about 1/4 cup or so). YUMMY!

White Chili II

Okay, I have to brag!!! This recipe won first prize at my husband's school's chili cook-off, hands down. He said it wasn't even close!!! IMPORTANT: Don't use all the chicken broth. I only used ONE can and was perfect. Many reviewers had to thicken their chili and that was because of all the broth in the original recipe. Also, pureeing one can of the beans helps to thicken the chili. Next time I will sprinkle cilantro over the chili once it is cooked. I assembled this chili, then put it in a slow cooker on high for about 3 hours. PERFECT!!

Old Fashioned Mac and Cheese

This was quite good, but it lacks something. I think next time I will use pepper jack and sharp cheddar cheeses. The only things I changed were I didn't layer it, I just stirred it all together. I melted the velveeta into the cream sauce. I also added seasoned ground up croutons over the top for added flavor. I baked it, and then froze it to eat later. It turned out great!!!! I put it in a cold oven and heated it up gradually while still cold but not frozen (I thawed it a day ahead). Good recipe though but you need to tweak it to your liking regarding the cheeses.

Mini Pumpkin Butterscotch Muffins

These were good but WAY too sweet and rich for my family. Most of them went uneaten because it was like eating candy! Also, be VERY careful and don't use too many butterscotch chips. They melted and caused the muffins to stick in the muffin tray, making it very difficult to remove the muffins.

Cheesy Ham and Hash Brown Casserole

My family LOVED this recipe. Believe me, as the mom of 3 very picky boys, it is really amazing to find a recipe they ALL like! I made this almost exactly as the recipe called for, except for adding diced green pepper and onion, which I sauteed first so it was somewhat cooked. This recipe is a keeper! I can't wait to take this dish to my next potluck.

Chicken Salad Sandwiches

I made this recipe for my VERY picky family and they LOVED it!!! I agree with other reviewers that it has an odd assortment of ingredients but it works! I followed the recipe pretty much. I used a store-bought rotisserie chicken and a red sweet pepper instead of green. I will definitely make this recipe again!

The Best Rolled Sugar Cookies

Great recipe! I followed it to the letter but I do have this tip to add: After you have refrigerated the dough (so it is easier to work with) divide the dough into four balls and wrap three of them in wax paper and put back in the refrigerator. Use the fourth ball right away as it will get soft and be hard to roll out. I found that dividing the dough into fourths was also about the right amount of dough for each large cookie sheet of cookies.
