Fluffy Pancakes

I used this recipe to make gluten free, dairy free pancakes. I subbed almond milk for the milk. Earth balance for the butter. And used Mama's Gluten Free Almond blend (with 1/4 tsp xantham gum) for the flour. They were delicious! Thanks.

Flourless Peanut Butter Cookies

The recipe as written is great. I have also used it to make peanut blossom cookies. Make the recipe as written, roll the dough balls in sugar and bake. Add a hershey kiss in the center after you take them out of the oven. AMAZING.

Chicken Scampi II

As written, I would give it three stars. I LOVE butter and am not scared of fat, but this recipe had too much butter and oil. I will make it again, however I'll brown the chicken first, then remove it from the pan. Then make up the sauce with less oil and butter and let it thicken up a bit before adding back the chicken and some vegetables. Thanks.

Pizza Dough III

This made a fantastic tasting crust that was easy to roll out and work with. I made to pizzas with it. 1 was a thin crust the other I topped with topping and let it rise a little to make a thicker crust. I used 1/2 cup wheat flour and 1 1/2 cups regular white flour (not bread flour) and it turned out great. After adding the oil, it looked very oily, but didn't seem that way when I rolled it or baked it. It took longer to rise (because of the wheat flour). After the rise, I punched it down and left it in the fridge all day until dinner time. I brought it to room temperature and it turned out great. This is the easiest and best of many recipes I've tried.

Burger or Hot Dog Buns

Good recipes. I will use it again. Bread turned out nicely. I used 1 cup of wheat flour in place of 1 cup of the white flour. It took a little over an hour to rise. I punched it down after, shaped the dough and let it rise on the baking sheet for another 20 minutes. Hot dog buns are perfect. Hamburger buns were a little smaller than i had hoped.

Blueberry Crumb Bars

I used butter instead of shortening. Everything else I kept the same. It had great consistency, but the flavor was bland. Needs a touch of salt, or maybe some citrus? Will not waste the ingredients on it again.

Buttermilk Pancakes I

I used vinegar in fat free milk for the buttermilk and added a bit of vanilla. They turned out well. Husband loved them, and they were easy to make.

The Perfect Chocolate Chip Cookie

Great cookie if you don't have butter. I added a little extra salt (because I usually use salted butter in my cookie recipes) and used double vanilla (no almond). Turned out perfectly. I still like butter cookies better, but these were a good second place (and less expensive).
