Roasted Tomato Salsa I

Reviewed: Sep. 12, 2006
Didn't like it the first day, but after it set overnight I loved it. Roasted the tomatoes whole (took longer than 10 mins because I wanted charred) but poked a hole in the skin to allow some liquid to drain out. Drained the juice after roasting and made a salad dressing with it. Didn't core the tomatoes at all - why bother.. I added fresh minced garlic to it and used more onion than the recipe calls for.

Roasted Red Pepper Tapenade

Reviewed: Dec. 30, 2008
Loved it! It definitely needs to chill at least the 2 hours so that the flavors blend. I let mine set overnight. Made it for Christmas and everyone demanded the recipe. Thanks.

Artichoke Salsa

Reviewed: Sep. 26, 2008
Loved it. I seeded the tomatoes before chopping them then added a little liquid from the artichokes. This is a keeper. Thanks.

Artichoke, Cheese and Olive Antipasto

Reviewed: Sep. 26, 2008
I really like this and everyone that tasted it wanted the recipe. I used part smoked and part regular provolone. Instead of putting it in a jar to marinate, I used a plastic bag and shook it periodically. That way, everything got covered with the yummy liquid.

Rhubarb Crisp

Reviewed: May 12, 2009
A little sugar added to the topping made it even tastier. Hubby said it is better than his mom's rhubarb pie. I'm not a fan of rhubarb but I loved this! Definitely a keeper.

Barbeque Tempeh Sandwiches

Reviewed: Jan. 25, 2007
This was okay but wasn't much different than baked beans. As a time saver, I used frozen peppers that has a mix of colored peppers and onions.

Vegetable Cheese Soup I

Reviewed: Oct. 10, 2006
The celery seed made it a little bitter so next time I'll just use chopped sauted celery. Good basic recipe though. Will definitely make it again with various veggie additions.

Beaker's Vegetable Barley Soup

Reviewed: Nov. 6, 2009
Good basic recipe with a different slant on taste. A teaspoon of curry powder is way too much as it was overpowering. Definitely too much barley too cause it was more like vegetables with a little broth than a soup/stew. If I made it again I would sprinkle just a bit of curry and cut the barley to 1/2 cup (or add more broth).

French Onion Soup With Browned Garlic

Reviewed: Nov. 13, 2008
The sherry made this way too sweet and I didn't even use a whole cup. It might be better with a good red wine instead but I doubt I will make it again.

Vegan Black Bean Soup

Reviewed: Oct. 17, 2008
Added a splash of lime juice and hot pepper sauce for more flavor since I found this soup bland. It is an okay soup but not great.

Creamy Pepper Jack Cheese Soup

Reviewed: Mar. 12, 2010
I wanted to like this soup but didn't. I didn't like the flavor, it was too thick and the texture was grainy. For anyone else making it, heat the milk and broth before adding to the flour mixture. Then add it slowly and stir constantly. This should help the consistency. Just be careful not to boil the milk. I won't make this soup again.

Fig and Olive Tapenade

Reviewed: Jul. 19, 2008
There is something in the recipe that shouldn't be there - perhaps the garlic? I tried it multiple times but I didn't like it at all.
