Chicken Noodle Casserole

Reviewed: Feb. 23, 2009
Love it! Great for using up left over chicken. I've made this recipe 3 times, and have made the recipe exactly (with the exception of savory--I used a pinch of thyme and sage). I have also tried it with skim milk and spelt flour---doesn't turn out nearly as good as the original recipe. I use just one pot. I cook the veggies and chicken first. Dump them in the casserole dish. Cook the noodles. Dump them in casserole dish. Cook the sauce. Mix with other ingredients. It gets a 5 star as all five members of my family eat this. My picky 5 yr old, 4 yr old and 1 yr old, as well as my picky husband.

Crustless Spinach Quiche

Reviewed: Dec. 25, 2008
My 5, 4 and 1 year olds were begging for more for Christmas lunch. It was quick and easy to make. I made the recipe as directed, but I added in some finely chopped garlic, tomatoes, mushrooms and ham that I wanted to use up. As well, I added some basil and dry mustard. Delicious. It will become part of my regular rotation. Thanks for an easy and quick Chrismtas lunch!

Buttermilk Oatmeal Muffins

Reviewed: Nov. 21, 2008
Thank you! I have been searching for years for a recipe that replicates the Quaker Oatmeal Muffin Mix. This is it! It made 8 muffins and I baked for 20 minutes. I added 1 tsp vanilla and 1 tsp cinnamon. Light and fluffy...not dense at all like many other oatmeal muffins I have tried.

Pasta Isabarte

This was good and easy too. I used Jackie's "Best Marinara Sauce Yet" for the jar of spaghetti sauce and it was delicious. I should have used 3 eggs. Looking forward to the leftovers. Thanks!

Best Marinara Sauce Yet

Reviewed: Oct. 1, 2006
Yum!! This was great! I sauteed the garlic and onions in olive oil, and then put them in the blender with the other ingredients. I added some brown sugar for the tartness(probably due to the "No Name" tomatoes I used which were diced, not stewed) and I added some fresh basil. I simmered for 1.5 hrs and skimmed the foam off the top.

Hot Bruschetta Dip

Reviewed: Jul. 11, 2006
This was really good! I took it to a pool party and everyone raved about it. I didn't have green onions on hand so instead used fresh chives from my garden. I also added more fresh basil than called for and some salt and pepper. This is my new "staple" appetizer. So easy!!
