Pork with Peach and Black Bean Salsa

Very simple and tasty. I noticed that it was much better the second day, and I also noticed that the taste was much better with the pork mixed in (rather than separate). The mixture alone was a little discordant, but the mixture with the pork was great!

Easy Pumpkin Muffins

I had to change the flavor of cake mix. I didn't have the yellow on hand, so I used Butter Pecan, and it was fabulous!!! I also added about 1/2 cup of golden raisins. This recipe was so simple and tasty; the muffins are extremely moist! Thanks!
